Vanilla Coconut Cupcakes with Ferrero Rocher centre

I baked vanilla coconut cupcakes with Ferrero Rocher centres and topped with pink icing and a raspberry.  I cheated.  Everything came out from a pre-mix so I have no recipe except to follow the instructions on the box. Potato Salad

I love potato salad and I love making it!  I tend to poo-poo most potato salads made outside because potato + mayo does not make a good potato salad!!  I made this potato salad to go with my brown rice salad for my Sunday picnic by the beach so its simple and a picnic staple in my opinion. Had a picnic on Sunday so I prepared some simple food that could be packed into lunchboxes and carried to the beach!  First up is my brown rice salad. You’ll need: 1/2 cup brown rice half a tomato, diced 1 cup shredded roast chicken 2-3 tablespoon pesto sauce 1 roasted red pepper, diced salt & pepper Cook the rice as per normal and when done, toss in all the other ingredients and you’re done! Baked Salmon & Roasted Fingerling Potatoes with paprika

I love brunch. It’s perfect for people like me who like to laze around in bed before getting up to the humdrum of the world.  Who ever said that brunch had to have eggs?  I decided to go with salmon and potatoes but in a lighter way. Sambal Fried Rice

I love home-cooked fried rice because it is a lot healthier but still has the bursting flavours.  In my fried rice, I used diced carrots, broccoli, cubed chicken and sliced fish.  Another healthier option that I used was olive oil instead of vegetable oil.  But of course, me being Singaporean, I must add a dose of sambal to add the heat and wonderful taste of dried shrimp.
