Moonlight Spaghetti

I had forgotten that my mum had asked me to get my own dinner today so when I came home, there wasn’t any food waiting for me 🙁 Fastest thing to whip up then was…spaghetti!  I thought of this healthy alternative to a carbonara as I wanted that creaminess but minus the cholesterol.  So…ingredients (serves 1 or 2 not-so-hungry ladies): 4 cloves of garlic, minced1 egg, separated4 prawns (or half a chicken thigh/ squid/ whatever is in your freezer)1 cup of milk (I used skimmed)6 cherry tomatoes, halved1/3 head of broccoli (or asparagus/ cauliflower)Spaghetti (depends on how much you want...

Mediterranean-inspired Chicken Cous Cous

Cous cous isn’t a very commonly eaten or cooked pasta here in Singapore but my brother had bought a packet of it ages ago so my mum was determined to cook a cous cous dish just so as to finish it before it expires.  As such, above is our mediterranean-inspired chicken cous cous.  It’s a very simple chicken stew on top of cous cous.  Here’s the recipe (serves 4 pax): 2 chicken thighs, roughly chopped (use more if you want to eat more than 1/4 chicken thigh  1 can of baked beans (or chick peas/garbanzo beans but this must be...

Hello!

Hi everyone, I’ve decided to branch out from my other blog melfann.com to focus on food.  I’m thinking of re-posting those entries on this blog before I have the time to really cook new dishes…which may not be that often since I now have a helper. Note: I’m not a Master Chef-wannabe and I will never take part in such competition.  I’m just a lazy cook who loves good food – especially when it can be easily recreated from one’s kitchen. So stay tuned and eat well!

Stir-fried Soumen

Here’s something really simple to prepare and cook – all under 20 minutes.  I just came up with this dish because my student cancelled our lesson at the last minute and I needed to whip something up quick and healthy. Soumen is a type of Japanese noodle that is normally eaten cold in the summer with diluted soya sauce that has been boiled with seaweed/ bonito.  It tastes a lot like the Chinese mee sua…so I thought, “Why not stir fry this noodle?” You’ll need: soumen (it’s normally packed such that 1 bundle serves 1 person) 1 diced chicken thigh...

Scrambled Eggs, Oyako Don, Sausages, Pancakes & Soumen

I realised that I have been cooking but not posting up a lot of the photos of the foods that I’ve cooked recently so here they are: The above breakfast was a result of me being sick and tired of eating cold salami, fruit and yoghurt for breakfast when we were in Italy so the day we were back in London, I cooked myself scrambled eggs on top of English muffin and cheddar cheese.  Simple but delish considering the no. of cold breakfasts… During Hari Raya, we were all a bit lazy to really go out so I cooked Oyako-don. ...

Cupcakes & Spaghetti Vongole

I just had the urge to bake on Monday, so I did!  I cheated and just bought a pre-mix though. Haha…I baked lemon cupcakes with a simple icing.  It was delish! I’m not a cake person so one is enough for me. 🙂 So satisfying to bake perfect cupcakes without having to measure the flour etc.  😛  Now…what else should I bake? Spaghetti vongole with vodka sauce.  Looks like a lot but it’s mainly clams.  Lots of clams.  Out of which, quite a few didn’t open.  Garlic, vodka, clams and spaghetti – yum!  I love pasta.  It’s so simple but...

Quick ‘claypot’

In case you were wondering, yes, I do cook Asian food.  😛  Above is my healthy take on claypot rice.  Verdict – too healthy.  Haha…there’s something about claypot rice where the oil (lard at most times) just sings to your tastebuds.  Anyway, my claypot rice is a simple one-pot affair of rice, dark soy sauce, light soy sauce, sesame oil, ginger, garlic, chopped french beans, shitake mushrooms (make sure it’s rehydrated) and tuna. I just dumped everything into the rice cooker and let it do it’s job.  Prep time: 5 minCooking time: 15 min (or more…if you’re cooking for more...

Meat & Potatoes

Yup, I can be a meat and potatoes kinda girl too.  Now, I got lazy this time round and decided to just roast everything in the oven.  Note to self – beef tastes good only when it’s grilled or pan seared.  My beef was cooked perfectly medium but…the flavours aren’t sealed in.  Hence, grill or pan fry it. My roasted potatoes with rosemary and cheese rocked though!  The roasted cherry tomatoes were oh sooo sweet while the french beans were well…french beans.  Told you I got lazy right?  So I microwaved the potatoes in a bowl of water for 4...

Pan Seared Tuna with Spaghetti

Yet another day in chef mode!  This time round, it’s pan-seared tuna with spaghetti done primavera style.  If you notice, I pan-seared the tuna such that it’s still pink in the middle.  That’s how I like my tuna…and not the crap that comes in cans. While I was chopping up my garlic, bacon and french beans, I started boiling water to cook my spaghetti.  My favourite brand of spaghetti is Barilla.  I think it’s the best and I like to use their No. 5 or No. 7 as I prefer that sort of thickness.  I used No. 5 this time...

Stir fried Prawns, Broccoli and Cherry Tomatoes

I’ve been so sick of eating food cooked outside that I decided to do a little cooking of my own. It’s also part of me celebrating the fact that I can eat prawns (shellfish in general) now!!!  So, above is a relatively healthy meal of stir fried prawns with bacon, broccoli and cherry tomatoes on a bed of garlic mash and topped with red & white cheddar. My cooking is really simple – I first boiled the potatoes (2 in this case) with a little salt and when it was soft enough to mash, I simply drained the water and...
