Cocktails were experienced at WOOBAR, while the food was served from SKIRT, the modern grill restaurant within W Singapore – Sentosa Cove.

A Cocktail Menu Inspired by Flow and Movement

Set against the marina at Sentosa Cove, WOOBAR’s latest cocktail programme draws inspiration from Singapore’s origins as a port shaped by water and movement . The menu is structured around three themes — Refresh, Adventurous, and Renewal — designed to evolve with the evening, from lighter aperitif-style drinks to more spirit-forward creations.

On paper, it sounds conceptual. In practice, it’s a mix of visual theatrics, experimental flavours, and a few surprisingly grounded hits.

The Cocktails: Beautiful, Experimental — But Not Always Balanced

Some of the cocktails lean heavily into presentation, and that can be a double-edged sword.

The Whispering Shell is one of the prettiest drinks on the menu, served in a delicate shell-shaped vessel. It’s visually striking, but usability becomes part of the experience — we genuinely weren’t sure how to drink it at first and had to ask for a straw. Flavour-wise, it’s very light and delicate. If you prefer bold, spirit-forward cocktails, this may come across as almost too subtle.

The Mystical cocktail plays up the theatrical angle with a smoky reveal. While I didn’t personally try it, the one who ordered it noted a noticeable smokiness that adds depth without overwhelming the drink.

The standout for me was the Blue Spring Martini. Clean, refreshing, and confidently spirit-forward, it struck a balance that worked. That said, it’s worth noting that another guest found it too strong — so this one really depends on your tolerance. For me, it set the tone for the evening in the best way.

Overall, the cocktail programme is clearly designed to be experiential. But if you’re expecting consistently bold or flavour-packed drinks across the board, the lighter options may feel underwhelming.

The Food: Where Things Really Come Together

While the cocktails are the headline, the food at SKIRT quietly steals the show.

The Beef Tartare was well-executed, with the smoked egg yolk adding depth without overpowering the dish. Thankfully, the horseradish was subtle, making it more approachable. The potato rösti added a crisp contrast that tied everything together nicely.

The Grilled Fremantle Octopus was easily one of the best starters of the night. Tender, flavourful and lightly smoky, it hit that balance between texture and seasoning that’s harder to get right than it looks.

The Cubano Iberico Pluma was solid, but it’s the steaks that really anchor the menu.

60-Day Dry Aged T-bone

Steaks Worth Skipping the Sauce For

If you’re ordering the steaks, skip the sauces entirely.

The 60-day aged tomahawk was a standout — rich, complex, and carrying a subtle blue cheese-like note that added depth without being overpowering. It’s one of those cuts that doesn’t need much explanation once you try it.

The Picanha was another highlight, even with the fat layer removed due to the wagyu cut. Still flavourful and satisfying.

The Signature Skirt Steak was equally reliable — no surprises, just well-executed, quality meat.

Paired with a well-selected wine, this part of the meal felt the most cohesive and intentional.

Charred Hispi Cabbage

Don’t Skip the Sides — Seriously

Unexpectedly, the sides ended up being some of the most memorable dishes.

The Charred Hispi Cabbage is a MUST-order. It’s deeply flavourful, slightly smoky, and satisfying enough to eat on its own. Easily one of those dishes you’d come back for.

The Grilled Padron Peppers leaned sweet and balanced, making them an easy crowd-pleaser.

The Smoked Mashed Potato was good, but in comparison to the cabbage and peppers, it felt less exciting.

A Light but Satisfying Finish

Dessert came in the form of a Berries Pavlova, which was a fitting end to the meal. Light, not overly sweet, with a pleasant tartness from the berries. Paired with moscato, it rounded off the experience nicely without feeling heavy.

Final Thoughts

WOOBAR’s Ban Zu menu is clearly designed as an experience — one that blends visual storytelling with a progression of flavours throughout the night .

The cocktails are creative and visually impressive, though not always consistent in flavour intensity. The food, on the other hand, is where the experience truly delivers — particularly the steaks and standout sides like the charred Hispi cabbage.

If you’re heading here purely for cocktails, manage your expectations depending on your flavour preferences. But if you’re coming for a full dining experience (or to impress your date) with good food, strong execution, and a few memorable dishes, it’s worth the trip.
