Pizza fans have another reason to head to Tanjong Pagar this September. Fortuna Singapore is bringing together four pizzaioli from Singapore and Sydney for a one-night-only dinner on 16 September 2026, built around the flavours and pizza traditions of Sicily and Naples.

Titled The Kingdom of the 2 Sicilies, the collaboration sees Fortuna’s Egon Marzaioli and Silvio Groppelli working alongside two visiting chefs from Sydney: Matteo Ernandes of Regina La Pizzeria and Francesco Manolio of Lil Franky Pizzeria.

The dinner features a six-course menu presented across seven acts, using pizza to explore the shared culinary roots of Southern Italy — from long-fermented dough and wood-fired cooking to ingredients associated with Sicily and the Campania region.

Four Pizzaioli, Two Italian Traditions

Fortuna, currently ranked #33 on the 50 Top Pizza Asia-Pacific 2026 list, is known for combining Sicilian influences with Neapolitan pizza techniques.

Joining founder Egon Marzaioli for the evening is the restaurant’s recently appointed Executive Pizza Chef, Silvio Groppelli, who previously received three consecutive years of recognition from Gambero Rosso in Australia.

Flying in from Sydney are Matteo Ernandes, the Sicilian-born head pizzaiolo and co-owner of Regina La Pizzeria, and Francesco Manolio, the Salerno-raised co-owner of Lil Franky Pizzeria.

Rather than simply putting several guest pizzas on one menu, the chefs have structured the meal around the relationship — and occasional rivalry — between Naples and Sicily.

What’s on the Menu?

The meal begins with a Montanara, a fried pizza traditionally associated with Naples. Fortuna’s version, named La Corona Dorata, is double-fried for a crisp exterior while keeping the dough light inside.

Diners can choose between two versions: one featuring cherry tomatoes and pecorino inspired by the Cilento coast, or a Sicilian variation made with truffle paste, ricotta mousse and eggplant.

Regina La Pizzeria then takes over with two Sicilian-inspired creations.

The first, Il Borbone, uses a twice-cooked pizza base topped with stracciatella, Trapanese pesto, anchovies, roasted hazelnuts and lemon zest.

That is followed by Sua Maestà, which takes the menu in a less conventional direction with roasted eggplant purée, raw veal tartare and confit garlic mayonnaise.

Lil Franky’s contribution, Il Sole di Parthenope, shifts the focus towards Naples. The pizza combines a yellow tomato base with buffalo mozzarella, cherry tomatoes and aged ricotta. Its name references Parthenope, the siren associated with the founding mythology of Naples.

Fortuna then returns to Sicily with La Trinacria, named after the island’s ancient three-legged symbol. The pizza comes with a zucchini purée base, cured tuna, goat cheese mousse and toasted almonds.

Pizza for Dessert?

The final course brings the two regional influences together — and turns pizza into dessert.

Called Oro Nero, or “black gold”, the dish uses a cocoa padellino topped with mascarpone mousse, coffee gel and chocolate soil.

It is perhaps the clearest sign that this isn’t intended to be a conventional pizza dinner. Ingredients such as veal tartare, cured tuna, goat cheese mousse and cocoa dough push the menu closer to a tasting-menu interpretation of pizza than the usual sequence of pies for sharing.

The collaboration also arrives shortly after Groppelli’s appointment as Fortuna’s Executive Pizza Chef, with the restaurant placing greater emphasis on fermentation and L’arte Bianca — the Italian tradition surrounding flour, dough and bread-making.
