MO BAR at Mandarin Oriental, Singapore has unveiled Volume Six: The Echoes of Singapore, its most ambitious cocktail menu yet—and it’s more than just drinks. It’s a multi-sensory experience that tells the story of Singapore through 15 inventive cocktails across five storytelling chapters, blending local culture, community, and a bold vision of the future.
Each sip is steeped in heritage, innovation, and a generous pour of the bar’s signature sophistication.
Sip the Past, Present & Future
MO BAR’s latest menu honours Singapore’s soul through cocktails that reference local icons—from Samsui women and kaya toast to sustainability and third-wave coffee.

Past Echoes
- Banana Dollar: A cheeky nod to Singapore’s wartime currency, this guava-banana sparkler features a banana “note” made of rice paper.
- Miss Samsui: Lapsang tea, maraschino-infused red wine, and shochu create a tribute to the resilient Samsui women.
- Gao Lak: Mezcal meets roasted chestnut and black bean vinegar in a smoky ode to Teochew street snacks.
Modern Interpretations
- Haji Lane: A zesty mix of rum, Branca Menta, sugarcane and Tiger Beer, garnished with a splash of the neighbourhood’s artsy flair.
- Sarapan: A boozy love letter to kaya toast and kopi, this one stars kaya gin and bourbon-soaked Campari.
- RE:TOX: A “detox” juice turned party drink—think celery, cucumber and lime amped up with tequila.

Innovative Future
- Hop ‘n’ Rol: Cold-distilled lager, housemade passionfruit cordial, and a side of masala chai prawn crackers—because why not?
- Plant-ish: Served in a claypot with Oreo “soil,” this Hennessy-miso-vanilla dessert cocktail channels Singapore’s 30×30 sustainability goal.
- Reclaimed Sling 2.0: A crystal-clear, reengineered Singapore Sling finished with a red lollipop made from the drink itself.
Cocktails Built on Community
MO BAR also collaborated with local innovators like Prefer and Fura, integrating alternative ingredients, upcycling, and sustainability into each glass.
- “Espresso Martini”: Made with Prefer’s bean-free “coffee,” Guinness notes, and topped with Jolly Pong crisps.
- T.Y.F (Thank You Fura): A bar-to-bar appreciation note featuring kombucha from Fura’s SCOBY.
- RECAP: A zero-waste lychee martini served in upcycled bottles.

MO BAR’s “Exceptionally Mandarin Oriental” chapter includes luxurious updates to the classics:
- Mandarin Martini – A citrus-touched, Old Tom gin rework of the dry martini.
- MO Whiskey Sour – Tea-infused, citrusy, and silky-smooth.
- Oriental Heritage – A smoke-filled showstopper unveiled from a treasure chest, made with The Macallan 12, Hennessy XO, and pimento dram.
Even the menu design invites discovery—housed in a navy box with wave motifs and a custom reel-viewer for a playful twist on traditional drink lists.
“We’re distilling the soul of Singapore into each glass,” says Bar Manager Charlie Kim. “This is mixology that tells a story—bold, emotive, and rooted in place.”
