Torasho Ramen Bar has reopened its dining space at Takashimaya Food Hall B2, bringing diners back to its signature approach centred on classic Tokyo-style shoyu ramen. The homegrown concept by Chef Sho Naganuma has spent the past six years building a following for its straightforward interpretation of everyday ramen culture found across neighbourhood shops in Japan.

With the reopening, the menu sharpens its focus on a single defining style: shoyu ramen prepared in the lighter yet deeply savoury Tokyo tradition.

A Clear Shoyu Broth Inspired by Tokyo Ramen Traditions

At the core of the menu is a soy sauce–based broth that reflects the clean, balanced character typically associated with Tokyo-style ramen. Instead of relying heavily on pork bones for richness, the broth draws flavour from simmered chashu pork, resulting in a lighter but still satisfying bowl that allows the ingredients to shine.

The signature Ramen presents the broth in its simplest form, while Chashumen adds extra slices of slow-prepared pork for a fuller experience. Other variations include versions topped with marinated tamago, as well as wonton combinations that introduce additional texture without altering the identity of the broth.

Each bowl builds on the same shoyu base, allowing diners to explore different toppings while maintaining a consistent flavour profile.

Tsukemen Offers a Different Way to Enjoy the Broth and Noodles

Beyond traditional soup ramen, Torasho also serves tsukemen, where noodles are presented separately from the broth and dipped before eating. This style changes the pacing of the meal and highlights the texture of the noodles more distinctly with each bite.

Guests can choose from several variations including classic tsukemen, versions with tamago, and combinations topped with chashu or wontons.

Proprietary Noodles and House-Prepared Chashu Anchor the Experience

The ramen is paired with proprietary noodles produced by specialist makers in Sapporo and Tokyo using a recipe developed exclusively for Torasho. Chashu is prepared fresh in-house, reinforcing the restaurant’s commitment to traditional techniques and a more old-school ramen shop approach.

Together, these elements reflect the concept’s focus on simplicity, consistency, and craft rather than trend-driven variations.

Side Dishes and Customisable Toppings Round Out the Menu

To complement the ramen, diners can add set options such as rice, chashu rice, or small curry rice, each served with green tea. Additional sides include wontons, karaage, and extra portions of chashu.

For those who prefer to personalise their bowls, toppings such as tamago, nori, menma, and bean sprouts are available, along with condiments like garlic, ramen pepper, and chilli garlic that allow guests to adjust flavour intensity to their preference.
