El Chido, the rooftop playground perched above Singapore’s Civic District, has launched a vibrant new food and cocktail menu that leans into creative expression, cross-cultural flavours, and poolside fun. With views of the skyline and a breezy, high-energy vibe, the venue offers guests a fresh way to enjoy Mexican cuisine with a global twist.

“Every visit to El Chido should feel like a little escape,” says Mazen Abilmona, General Manager of Pullman Singapore Hill Street. “We want people to experience bold, exciting flavours that match the rooftop’s energy—fun, dynamic, and refreshingly different.”

Mexican Flavours, Reimagined in Singapore

Helmed by Executive Sous Chef Hong Dingzhao, the new menu fuses the vibrancy of Mexican street food with playful nods to Singapore’s own culinary heritage.

The Chicken Rice Chimichanga is a standout—El Chido’s take on Singapore’s iconic dish, featuring smoked chicken, mozzarella, and pickles wrapped in a crisp tortilla. The Breaded Fish Otah Tortilla marries local spiced fish paste with green papaya salad and crushed peanuts for a layered, crunchy bite.

Other highlights include the Pulled Beef Short Ribs Tostada, topped with goat cheese, charred shishito peppers and pickled onion, and a sweet finish in the form of Pineapple Cheesecake glazed with rum caramel.

Cocktails That Break the Rules

Bar Manager Riot Gurvinder has shaken up the drinks menu with inventive, flavour-layered cocktails that offer a fresh take on beloved classics—many using house-made infusions and unexpected pairings.

The Clarified Strawberry Mojito reimagines the Cuban staple with a crystal-clear blend of rum, mint, citrus and Perrier, while the Dáli, named after the surrealist icon, mixes gin, citrus, and cherry liqueur with raspberry-infused cherries for a drink that’s vibrant and artistic.

For something richer, there’s the Dark Mocha Martini (DMM), a luscious combination of vodka, dark chocolate, hazelnut, vanilla and espresso. The Tajin Eclipse delivers smoky-spicy depth with mezcal, sweet vermouth, and a house-made Tajin-infused sweet water, while the El Naranja puts a bolder spin on the Margarita with tequila, orange liqueur, citrus, and agave nectar.

A Rooftop for Every Mood

Since its debut in late 2023, El Chido has quickly become a go-to for themed events like Ladies’ Night, Taco Tuesdays, and the Endless Slushie Fiesta. Now, the bar is stepping up its game with a new partnership with Element Events to roll out an expanded series of experiences.

First up is Element Junior on 23 March—a family-friendly rooftop party with live music, DJ sets, and curated food and drinks, proving El Chido isn’t just for the after-hours crowd. With more events in the works, this rooftop destination continues to evolve into one of the city’s most dynamic places to eat, drink, and play.
