On 7 and 8 March 2025, guests can indulge in a one-of-a-kind fusion of Cantonese and Japanese cuisine, brought to life by Michelin-starred Summer Pavilion’s Chef Cheung Siu Kong and Edomae sushi master Chef Fujimoto.
This exclusive two-day event includes a seven-course omakase experience at Summer Pavilion and a cocktail and bar bites pairing at Republic Bar, offering a rare opportunity to experience the best of both culinary traditions.
A One-Day-Only Omakase at Summer Pavilion
On 7 March 2025, Summer Pavilion will host an extraordinary seven-course menu, each course celebrating a single key ingredient through both Cantonese and Japanese culinary techniques. Highlights include:
- Sea Urchin Two Ways – Served atop delicate steamed egg white with shiso leaf (Summer Pavilion) or as a “one spoon” dish with rice and egg yolk (Sushi Fujimoto).
- Australian Lobster and Sea Whelk Sashimi – Accompanied by a rich Kyoto white miso lobster soup with seasonal vegetables.
- Scallop Duo – A contrast of charcoal-grilled and tempura-coated scallops, with the latter paired with homemade XO sauce.
- Miyazaki Wagyu Two Ways – Seared to perfection by Summer Pavilion, and served sukiyaki-style with Japanese rice and egg white by Sushi Fujimoto.
- Japanese Pearl Rice with Crab Meat & Bara Chirashi – Two distinct rice dishes showcasing the craftsmanship of both chefs.
- Dessert Duo – A delicate Steamed Egg with Superior Bird’s Nest alongside traditional Japanese Tamagoyaki.
