Two MICHELIN-starred Cristal Room by Anne-Sophie Pic in Hong Kong is launching its new Masters Series on 22 October 2026 with a one-night collaboration featuring Chef Allen Suh of Seoul’s two MICHELIN-starred Restaurant Allen.
The dinner brings Chef Suh together with Cristal Room Executive Chef Marc Mantovani for a multi-course menu that combines two distinct approaches to contemporary French cuisine. Mantovani represents Anne-Sophie Pic’s culinary philosophy, including her focus on aromatic combinations and the concept of Suffusion, while Suh draws on Korean ingredients, seasonality and his Le Goût du Terroir philosophy.

Two kitchens, one table
The collaboration opens with a series of small bites, including Cadoret oyster with caviar and lardo cream, trout pie tee with yuzu and black sesame, Restaurant Allen’s abalone vol-au-vent, and duck liver parfait with jujube and brioche toast.
Restaurant Allen then contributes smoked mackerel with shrimp, beancurd and tofu sauce, before the menu moves to one of Cristal Room’s signatures: Les Berlingots ASP. The pasta parcels are filled with 24-month Comté cheese fondue and served with an onion consommé scented with lavender and smoked vanilla.

Other courses include Restaurant Allen’s lobster with Korean local rice risotto and cheese sabayon, followed by Cristal Room’s wild sea bass with Petrossian Daurenki Tsar Imperial Caviar. The latter draws from a Jacques Pic signature dating back to 1971.


The savoury portion concludes with Korean galbi served with kimchi salad and radish, bringing a more direct Korean reference into the menu.
Dessert and beverage pairing
Dessert comes in the form of Le Millefeuille Blanc, combining geranium Chantilly, candied ginger, genmaicha crémeux and crisp tuiles. A selection of mignardises follows, including chocolate tart with walnut and vin jaune, strawberry barquette with pine bud, a buckwheat chocolate cracker and sand cookies.
An optional beverage pairing will move between wine and sake depending on each course. The proposed progression includes Pinot Noir-led Champagne for the opening bites, Jura Savagnin or aged Loire Valley Sauvignon Blanc with the seafood course, Dassai sake with lobster and Korean rice, and Rhône Valley Syrah or Grenache with the galbi.
Who is Chef Allen Suh?
Chef Allen Suh founded Restaurant Allen in Seoul in 2021. The restaurant received its first MICHELIN Star in its opening year and a second the following year. His cooking centres on seasonal Korean produce sourced from farmers, fishermen and artisanal producers, while applying French techniques in a way intended to preserve the character of the ingredients.


The Hong Kong dinner is only the first part of the collaboration. A second chapter will take place in Seoul on 14 November 2026, when Chef Marc Mantovani travels to Restaurant Allen.
