Lunch in Singapore’s CBD can be a hurried affair, but Cygnet at QT Singapore is giving diners a reason to linger with a refreshed weekday set lunch led by newly appointed Executive Chef Fabrice Mergalet.
The Cygnet set lunch is priced at S$48++ for two courses and S$58++ for three courses, with a menu built around quality produce, handmade pasta and dishes that balance familiar flavours with a few unexpected touches.
Starters that go beyond the usual salad
The starter selection spans seafood and vegetable-led options. The Chef’s Sea Bream Ceviche combines sea bream with aji amarillo, onion, avocado and olives, finished with seaweed popcorn for extra texture.
Vegetarians have a couple of substantial choices rather than an afterthought side salad. The Grilled Halloumi is served with quinoa, chickpeas, cucumber, tomatoes, olives and peppers in a lemon-oregano dressing, while the Grilled Portobello comes with white beans, guindilla dressing and spiced hazelnuts.
For something more indulgent, the Red Prawn Carpaccio is available with a S$12 supplement. The prawns are paired with a Virgin Bloody Mary-style sauce and white truffle pearls.

Wagyu burger, tuna steak and handmade pasta for mains
One of the heartier additions is the Smashed Wagyu Burger, made with two Wagyu beef patties, pastrami, sauerkraut, cheddar, lettuce and Cygnet’s special sauce, with seasoned fries on the side.
Seafood lovers can opt for the Tuna Steak for an additional S$12, served with seaweed beurre blanc and broccolini. The Pyrenees Lamb carries a S$16 supplement and is paired with cilantro aji verde and candied walnuts.
Cygnet has also moved its pasta production in-house. The King Crab Pasta returns with handmade tagliatelle, tomatoes, chilli, salmon roe and lemon. Another option is the Orecchiette with ’Nduja and Merguez, finished with Parmigiano for a richer, slightly spicy plate.
Classic desserts to finish
The dessert list keeps things familiar, with choices including Tiramisu Affogato, Crème Caramel and Lemuel Chocolate Fondant with chocolate crumbs and pepper berry salted caramel ice cream. Warm baby Madeleines, served fresh from the oven, are also part of the selection.

The weekday set lunch is available from Monday to Friday, 11.30am to 2.30pm. It costs S$48++ for two courses or S$58++ for three courses. Cygnet is also offering free corkage with the set lunch, so diners can bring a favourite bottle to accompany the meal.
