MO BAR Singapore Unveils Vol. 7 Modern Localism

MO BAR Singapore has launched Vol. 7 Modern Localism, titled The City of Art, a new cocktail menu that celebrates Singapore’s creative landscape through 15 thoughtfully crafted drinks. Located at Mandarin Oriental, Singapore, the award-winning bar continues its signature storytelling approach by translating the rhythm of the city into a sensory drinking experience.

This latest volume traces a full day in Singapore — from morning rituals and cultural encounters to late-night industry wind-downs — with each cocktail reflecting a moment, a mood, or a creative discipline encountered along the way.

A Menu Shaped by 11 Local Collaborators

Vol. 7 brings together 11 collaborators across perfumery, design, food, music and hospitality. Rather than simply spotlighting brands, the MO BAR team drew inspiration from the way these creators live and work, translating their craft into liquid form.

The result is a menu that feels personal and layered. Each drink becomes a reflection of the collaborator’s heritage, dedication and creative backstory, forming a collection of encounters that mirror how one might experience Singapore across a single day.

Morning Rituals and Cultural Encounters

The journey begins with morning-inspired expressions. Sifr Fizz opens the day as an aromatic highball infused with essential oil hydrosol, elderflower and saffron — a nod to heritage perfumery. Forest Fire follows, inspired by a National Gallery Singapore artwork, combining whisky, mezcal and warming spices for a smoky, contemplative serve.

Velour Kiss offers a softer interlude with gin, chamomile, bee pollen and olive oil, referencing self-care rituals, while The Artis presents a non-alcoholic option made with fermented banana tibicos, pandan and coconut salt, with the choice to add vodka for those who prefer.

Afternoon Creative Pauses

As the day transitions, the menu explores café culture and indulgent breaks. Bukit Kemas channels vintage glamour with baijiu, Lillet Blanc and roasted corn. Kopi Pumptini reinvents the espresso martini using kopi O, roasted barley bourbon and pumpkin notes.

Dessert-driven creations include B.T.B (Bean to Bar), featuring bourbon and cacao nibs kombucha, and Dopa? Dopa!, which layers salted caramel V.S.O.P., black tea and pistachio kunafa beneath a creamy crown. Several of these options are also available in non-alcoholic variations, broadening accessibility without compromising depth.

After Hours at MO BAR

Evening serves pivot towards bolder expressions. Reclaimed Sling 3.0 revisits the iconic Singapore Sling with a cleaner, crisper profile. Jo-hwa blends matsutake-infused gin with fino sherry and pear for a fruit-forward yet umami-driven drink inspired by modern Korean cuisine.

Jukuleles, named after the bar’s resident live band, offers a relaxed tiki-style highball, while Pine-Dustry closes the night as a tribute to Singapore’s bar community, pairing tequila and coconut elements with a pineapple tart garnish.

Enduring Signatures

Alongside the new creations, MO BAR retains its signature classics. The Mandarin Martini delivers a savoury citrus lift, the M.O. Whiskey Sour incorporates the hotel’s “Exceptionally Singapore” tea blend, and Oriental Heritage offers a spirit-forward combination of whisky, cognac and layered aromatics.

Together, Vol. 7 Modern Localism feels like a liquid journal — documenting impressions, encounters and flavours gathered across the city.
