LARK Enters a New Chapter in Luxury Single Malt Whisky
LARK Distilling Co., widely recognised as Australia’s leading luxury single malt producer and a pioneer of modern Tasmanian whisky, has introduced a new premium portfolio that signals a bold step onto the global stage.
Unveiled in January 2026, the collection features four expressions presented in a striking new design language and sculptural 700ml bottle. The refreshed identity reflects Tasmania’s dramatic landscapes and wildlife, while reinforcing LARK’s ambition to redefine the New World luxury whisky category.
Born and matured in Tasmania’s unique climate, the new range is positioned as a true expression of place — shaped by the island’s wild beauty, extreme seasonal shifts and maritime influence.

Whisky Shaped by Tasmania’s Super-Climate
Tasmania’s geography plays a defining role in LARK’s house style. Located just beyond the reach of Antarctica, the island experiences dramatic temperature swings across four distinct seasons, accelerating maturation and intensifying flavour development.
LARK sources Tasmanian barley malted in Devonport, producing a richer and more viscous spirit. Fermentation spans seven days using small-batch brewers’ yeast, with ambient wild yeast contributing to flavour complexity. Maturation takes place in premium fortified wine casks from Seppeltsfield in Australia’s Barossa Valley, some with over a century of history.
Peat is harvested from Tasmania’s Central Highlands at Browns Marsh, imparting a distinctive earthy smoke. LARK remains the only Southern Hemisphere distillery with its own peat-mining licence. The spirit is also cut with apple-wood smoked water sourced from Tasmanian orchards — a technique that enhances balance, texture and the brand’s signature savoury undertone.
Guided by Master Distiller Chris Thomson, the team focuses on taste rather than tradition, sampling each spirit extensively before release to ensure it reflects Tasmania’s terroir and character.
The Four Expressions
The new permanent portfolio comprises four distinct single malts, each showcasing a different dimension of the LARK house style.

Fire Trail
Positioned as the purest expression of LARK’s identity, Fire Trail highlights vibrant citrus and baked fruit layered over Port and Sherry cask richness. Subtle apple-wood smoke provides a savoury balance, delivering a bold yet approachable introduction to the range.

Devil’s Storm
A more powerful and textured expression, Devil’s Storm is matured in vintage first-fill Port and Sherry casks from Seppeltsfield and finished in American oak. The result reveals scorched red fruit, almond fudge and dark chocolate notes, offering intensity with controlled balance.

Ruby Abyss
Representing the debut of LARK’s Super Luxury tier, Ruby Abyss is aged entirely in first-fill vintage Port and Sherry casks, including a century-old Australian Port reserve. Deep dark fruit, caramelised brown sugar and mocha unfold into a finish of brandy snap sweetness and delicate peat smoke.

Cinder Forest (Global Travel Retail Exclusive)
Available exclusively through international airport retail, Cinder Forest showcases hand-selected fortified casks finished in American oak. Vanilla and honey lead into citrus lift, followed by layers of chocolate and spiced dates in a harmonious, lingering profile.
A Global Rollout
The new core range is being introduced through premium bars, select retail partners, e-commerce platforms and Global Travel Retail worldwide. The portfolio has already debuted in key regional markets including Malaysia and Singapore.
Founded in 1992 by Bill and Lyn Lark — whose efforts revived Tasmanian whisky production after more than a century — LARK continues to play a central role in shaping Australia’s whisky movement. Today, the distillery operates from its historic Pontville site, producing its flagship single malts alongside Forty Spotted Gin and the blended malt brand KURIO.
With this new luxury portfolio, LARK positions Tasmania not just as a rising whisky region, but as a defining force within the global New World category.
