On 16 and 17 July 2025, Hong Kong’s fine dining scene welcomes a rare collaboration between two acclaimed culinary forces: Sushi Fujimoto, the city’s revered Edomae sushi specialist, and NOI, the two Michelin-starred contemporary Italian restaurant at Four Seasons Hong Kong.

This two-night dinner series promises an unforgettable celebration of the ocean’s bounty, with each chef offering their take on seafood excellence—Japanese precision meets Italian creativity, united by a deep respect for seasonality and craftsmanship.

A Dual-Course Experience, Two Ways

  • 16 July: Hosted at NOI’s Italian Silhouette dining room

  • 17 July: Held at Sushi Fujimoto’s intimate nine-seat counter (two seatings: 6pm and 8:30pm)

Guests will enjoy a seafood-forward tasting menu blending techniques, philosophies, and cultural influences. Priced at HK$3,180 + 10% per guest, with optional drink pairings available.

About the Chefs

Chef Kenichi Fujimoto honed his skills under sushi legends Shinji Kanesaka and Takashi Saito. At his nine-seat counter in FOCO, he offers a refined Edomae sushi experience that blends simplicity with purity of flavour.

Chef Luigi Troiano, Head Chef of NOI, carries out Chef Paulo Airaudo’s global culinary vision, delivering inventive Italian cuisine that respects traditional roots while embracing contemporary techniques.
