As part of Singapore’s 60th birthday celebrations, 165 Sky Dining by Singapore Flyer has launched its first-ever Singapore-inspired five-course menu, offering a unique way to toast the nation—165 metres in the air.

Titled ‘An Ode to Singapore’, the limited-time menu is available from 1 July to 30 September 2025, treating guests to an elevated (literally) culinary experience that pays homage to the island’s diverse culinary heritage.

The meal kicks off with a bold fusion of east and west: the Deconstructed Laksa Boston Lobster, pairing aromatic coconut broth with fresh seafood and laksa leaf ash. Next comes a refreshing Sambal Salad with Japanese Beancurd, and a twist on the classic Bak Kut Teh, featuring chicken and seafood tortellini in an herbaceous broth.

Wagyu Sirloin with Har Cheong Butter

For mains, diners choose between:

• Pandan Chilean Seabass with Kecap Manis, roasted in pandan leaves with a touch of sweet Indonesian soy sauce, or

• Wagyu Sirloin Steak with Har Cheong Butter, a luxurious take on Singapore’s beloved shrimp paste chicken.

Dessert is equally nostalgic: a light Ondeh Ondeh Cake, served alongside petit fours by world-renowned chocolatier Janice Wong, and paired with a Singapore Sling or choice of tea/coffee.
