Torno Subito, the playful Italian dining concept by Massimo Bottura, marks its first anniversary in Singapore with an exciting lineup of culinary events this March. Known for blending classic Italian traditions with modern creativity, Bottura’s restaurant brings a slice of Emilia-Romagna’s vibrant food culture to Singapore’s dining scene.

To celebrate, Torno Subito is hosting a four-day residency with Massimo Bottura, introducing the new ‘Friends of Torno Subito’ four-hands dining series, and launching AperiTorno, an Italian aperitivo experience featuring handcrafted cocktails.

Massimo Bottura Returns: ‘CIAO Massimo!’ (4–7 March 2025)

For four days only, Massimo Bottura himself will be at Torno Subito Singapore, presenting a special tasting menu that showcases his signature avant-garde approach to Italian cuisine.

Lunch Tasting Menu (5–7 March | S$158++ per person | 5 courses)

  • Cotechino e Lenticchie – A seafood interpretation of Modena’s traditional sausage and lentil dish.
  • Modena Ribs – Glazed with balsamic vinegar and finished with bold, colourful sauces inspired by Damien Hirst’s spin paintings.
  • Zuppa Inglese – A refined take on the beloved Italian trifle.

Dinner Tasting Menu (4–6 March | S$218++ per person | 7 courses)

  • I Love Pizza – A creative spin on stone-baked Marinara pizza.
  • Maialino – Porchetta-style suckling pig, paired with apple compote and Swiss chard.
  • Lungomare – A seafood pasta that brings together tradition and contemporary techniques.

Friends of Torno Subito: A Four-Hands Dining Series

Torno Subito introduces ‘Friends of Torno Subito’, a series of collaborative dining events featuring global culinary talents. Executive Chef Alessio Pirozzi will team up with renowned chefs to present limited-time tasting menus that blend diverse culinary traditions.

Gucci Osteria Seoul da Massimo Bottura (14–15 March 2025)

The first edition sees a collaboration with Gucci Osteria Seoul, a project that fuses Korean and Italian flavours through a modern fine-dining lens.

Lunch (S$148++ per person | 4 courses)

  • Nerano – Chitarra pasta with Provolone del Monaco, Amalfi lemon, and zucchini.
  • Sentiero di Mt. Halla – Charcoal-grilled Jeju pork sirloin with chamnamul pesto.

Dinner (S$198++ per person | 6 courses)

  • Merluzzo Alla Ligure – Seared cod with green olives and rosemary crumble.
  • Abalone – Slow-cooked abalone with anchovies, butter sauce pasta, and daewoo sauce.

Alma (15–16 May 2025)

The series continues in May with a collaboration featuring Henrique Sá Pessoa, chef-owner of Alma, a two-Michelin-starred Portuguese restaurant. Expect a fusion of Portuguese and Italian influences in an unforgettable dining experience.

AperiTorno: An Italian Aperitivo Experience (Launching 19 March 2025)

Torno Subito introduces AperiTorno, a celebration of Italy’s aperitivo culture, where guests can enjoy crafted cocktails and complimentary bar bites during golden hour.

Featured Cocktails (S$15++ each, available Wed–Fri, 5:30 PM – 7:30 PM)

  • Nel Blu Dipinto di Blu – A citrusy blend of Dewar’s 15-Year Scotch, tomato, basil, lime, grapefruit, and milk, inspired by the Amalfi Coast.
  • Pesto Sour – A refreshing mix of Grey Goose Vodka infused with jasmine and olive oil, lemon, and basil, evoking the essence of the Italian Riviera.

With a lineup of nine unique cocktails, AperiTorno is perfect for unwinding with a drink in hand while soaking in the lively Italian atmosphere.
