This Ramadan, Grand Hyatt Singapore invites guests to break fast in a warm, communal setting with a thoughtfully curated Iftar buffet at StraitsKitchen. The meal begins with a selection of mezze such as hummus, baba ghanoush, and warm pita bread, followed by an array of live cooking stations showcasing classic regional dishes.

  • Malay Barbecue Station – Featuring grilled chicken, beef, and mutton satay, served with warm peanut sauce and rice cakes.
  • Shawarma StationFreshly carved chicken shawarma wrapped in pita with tahini sauce, onions, and crisp lettuce.
  • Hearty Mains – Indulge in Ayam Buah Keluak, a Peranakan-style braised chicken dish, and Beef Rendang, slow-cooked to perfection in coconut and aromatic spices.
  • Seafood DelightsIkan Bakar, grilled barramundi wrapped in banana leaves and slathered in sambal, and Udang Belado, tiger prawns stir-fried in a fiery belado sauce.

The Ramadan dinner buffet offers an even more extensive selection, featuring dishes like:

  • Lamb Mandi – Fragrant steamed basmati rice with slow-cooked lamb, saffron, pine nuts, and coriander.
  • Sayaduyah RiceAromatic jasmine rice with shrimp, barramundi, and Middle Eastern spices.
  • Kambing QormaSlow-braised lamb infused with cashew nut sauce and bell peppers.
  • Mahshi Felfel – Capsicum stuffed with spiced rice, dill, tomato, and minced beef.

Guests can also enjoy a Seafood on Ice station, featuring slipper lobster, mussels, clams, and black tiger prawns, as well as comforting soups like Sup Tulang Merah (a rich mutton bone stew) and Sup Ayam Palembang (kampung chicken soup with bean curd and basil leaves).

A highlight of the evening is the Date Bazaar, offering a curated selection of premium dates from across the Middle East and North Africa, including:

  • Ajwa (rich, caramel-like dates from Saudi Arabia)
  • Mabroum (chewy and flavourful)
  • Medjoul (prized Jordanian and Palestinian dates)
  • Deglet Nour (delicate Tunisian dates)
