The St. Regis Singapore is turning World Champagne Day into a month-long celebration this October, with Ruinart taking centre stage across several of the hotel’s dining venues. From 1 to 31 October 2026, diners can expect champagne-paired menus, afternoon tea, cocktails, caviar and special Ruinart pours at Sophia, The Tea Room and The St. Regis Bar.

Founded in 1729, Ruinart is regarded as the world’s first Champagne house and is particularly known for its Chardonnay-led cuvées. The October collaboration brings those wines into a range of experiences, from a full pairing dinner to more casual glasses and cocktails.

At Sophia, Chef de Cuisine Angelo Sergio has created a five-course Italian dinner paired with four Ruinart cuvées.

The menu starts with crab chiboust served with pulled Alaskan chilli king crab, burrata foam and salmon roe, followed by sliced Robbins Island Wagyu with balsamic truffle vinaigrette, candied Kalamata olives and truffle. Diners then move on to a champagne-infused Carnaroli risotto with rock lobster and Kaluga Queen caviar, before seared black cod with raspberry vinegar vegetable caponata, potage parmentier and shellfish oil. Dessert is a champagne mousse layered with pear compote and almond sablé.

The courses are paired with R de Ruinart Brut NV, Ruinart Rosé NV, Ruinart Blanc de Blancs and Dom Ruinart Blanc de Blancs 2010.

The Tea Room is giving its afternoon tea a champagne-and-caviar spin for October. Savouries include foie gras buckwheat blini with A&K caviar, tuna tartare and Osetra caviar tartlet, and Parmesan panna cotta with Ruinart Champagne espuma.

The champagne theme continues on the sweet side with a Ruinart Champagne and Granny Smith gâteau, Ruinart Champagne madeleine and champagne raisin scones.

The set includes a welcome glass of R de Ruinart Brut, tableside tea service by a tea sommelier and unlimited freshly baked scones with clotted cream, artisanal fruit jams and fruit caviar.

The St. Regis Bar will serve three cocktails built around R de Ruinart Brut. The Golden 75 combines whisky, honey, lemon and champagne; the Belle Rose mixes gin, strawberry, elderflower and champagne; while the Grand Royale brings together cognac, cassis, lemon and champagne.

Unlimited Ruinart at Jack’s Club

The month’s celebrations culminate on 30 October at Jack’s Club, the bar’s monthly live music night inspired by New York jazz lounges and cabarets.

A three-hour Ruinart Champagne package will be available for S$98++ per person, alongside live jazz and a curated DJ set from 8pm till late.

Champagne and caviar pairing

For something smaller, Sophia, The Tea Room and The St. Regis Bar will also offer a caviar and champagne pairing. It includes 10g of Kaluga Queen Osetra caviar with blinis and crème fraîche, paired with a glass of R de Ruinart Brut.

Throughout October, Ruinart champagnes will also be offered at preferential prices across the hotel’s dining venues. R de Ruinart starts from S$24++ per glass and S$120++ per bottle.

Catch the daily champagne sabrage ritual

The St. Regis Singapore’s long-running evening sabrage ritual continues throughout the promotion. Held daily at 6.30pm at the Grand Staircase, the ceremony sees a bottle of champagne opened with a sabre to mark the transition from day to evening.
