Shanghai’s dining scene has gained another notable Michelin success story with Amazing Chinese Cuisine ChangNingbeing awarded two Michelin stars in the latest edition of the Michelin Guide Shanghai, Jiangsu and Zhejiang. Sister restaurant Blossom also received a Bib Gourmand award, giving the Amazing Chinese Cuisine Group two major accolades in a single year.
The achievements add to the group’s growing list of honours, which also includes Three Diamonds from the Black Pearl Restaurant Guide for its flagship restaurant, Selection by Du. According to the group, only three restaurants in Shanghai currently hold that distinction.
A restaurant group dedicated to Chaoshan cuisine
Founded in 2015 by chef-restaurateur Du Jianqing, a native of Puning in Guangdong’s Chaoshan region, the group operates five restaurants across Shanghai, each exploring different expressions of Chaoshan cuisine.
The flagship Selection by Du offers an elevated take on Chaoshan cooking with views overlooking The Bund, while Amazing Chinese Cuisine ChangNing focuses on an intimate, private dining experience and Blossom presents a more accessible interpretation of the cuisine.
An intimate villa dining experience
Amazing Chinese Cuisine ChangNing occupies a standalone villa in Shanghai’s Changning district and features just five private dining rooms. The small scale reflects the restaurant’s emphasis on privacy, personalised service and ingredient-focused cooking.
The menu is rooted in the defining characteristics of Chaoshan cuisine: light seasoning, balance and an emphasis on preserving the natural flavours of ingredients. Techniques such as steaming, poaching and slow braising are used throughout the menu.
The kitchen also continues to source key ingredients directly from the Chaoshan region, including speciality seafood products and seasonal produce that shape the menu throughout the year.

A chef shaped by Chaoshan traditions
Leading the kitchen is Executive Chef Chen Shaoxiong, who grew up in his family’s restaurant in Puning and has spent more than three decades working in Chaozhou kitchens. He joined the founding team of Amazing Chinese Cuisine in 2015 and is known for his meticulous approach to sourcing and preparation.
Chef Chen’s cooking philosophy centres on preserving tradition while allowing room for refinement and evolution. Under his leadership, the group has earned recognition from both the Michelin Guide and the Black Pearl Restaurant Guide.
Steamed FourFinger Threadfin Fish
Signature dishes that highlight ingredients
The menu at Amazing Chinese Cuisine ChangNing changes with the seasons, but several dishes have become signatures of the restaurant.
Among them are:
- Steamed Fourfinger Threadfin, served chilled to highlight the fish’s natural sweetness and delicate texture.
- Chilled Crab with Marinated Raw Pipa Shrimp, showcasing clean and briny flavours.
- Crispy Sea Cucumber, a labour-intensive dish that requires several days of preparation.
- Braised Fish Maw with Chanterelles in Dried Seafood Broth, slow-cooked for five hours and finished with a touch of balsamic vinegar.
Many dishes are available only by pre-order due to the amount of preparation involved, reinforcing the restaurant’s focus on craftsmanship and detail.
