HighHouse’s acclaimed High Table chef collaboration series returns with a fresh culinary partnership that celebrates the vibrant flavours of Nikkei cuisine—the unique fusion of Peruvian and Japanese culinary traditions.
Running from 14 August to 21 November 2026, the fourth edition of High Table sees Chefs Daniel and Tamara Chavez, the husband-and-wife team behind CANCHITA Peruvian Cuisine, present an exclusive menu created solely for HighHouse. Available during both lunch and dinner service, the collaboration offers diners the opportunity to explore a contemporary interpretation of one of the world’s most exciting fusion cuisines.
A Celebration of Peruvian and Japanese Influences
Nikkei cuisine has its roots in the Japanese immigrant community in Peru, combining Japanese precision with Peru’s bold ingredients and flavours.
For this exclusive collaboration, Daniel and Tamara have developed an original menu that goes beyond the dishes served at CANCHITA, introducing guests to new creations that showcase premium Japanese produce alongside iconic Peruvian ingredients.
Meet the Chefs Behind the Collaboration
Daniel and Tamara Chavez have played a significant role in introducing modern Latin American cuisine to Singapore.
Together, they bring more than three decades of culinary experience, having worked across internationally recognised restaurants before establishing CANCHITA Peruvian Cuisine. Their work has helped broaden local appreciation for Peruvian gastronomy through contemporary interpretations of traditional flavours.
For High Table, the pair saw an opportunity to create something entirely new—one that highlights the multicultural influences that have shaped Peruvian cuisine while complementing HighHouse’s rooftop dining experience.

Highlights from the Nikkei-Inspired Menu
The limited-time menu features a range of starters, mains and desserts that blend familiar Peruvian flavours with Japanese techniques and ingredients.
Hokkaido Scallop Ceviche
Available during dinner, this ceviche pairs sweet Hokkaido scallops with ají amarillo tiger’s milk, crispy seaweed and toasted canchita corn for a vibrant balance of citrus, spice and texture.
Pulpo Rosita Yimura
Served during both lunch and dinner, this octopus dish pays tribute to Nikkei culinary pioneer Rosita Yimura, combining Japanese mayonnaise, black olive aioli, grilled chimichurri and seasoned potatoes.
Crab Tostaditas
Crunchy tortillas topped with fresh crab are enhanced with tobiko, nori, rocoto peppers, lima beans and red quinoa, delivering layers of texture and flavour.
Pan Con Chicharrón Nikkei
A Japanese-inspired interpretation of Peru’s beloved pork sandwich, this version replaces the traditional baguette with a fluffy steamed bun filled with pork jowl, pickled onions, sweet potato and huacatay dip.
Nikkei Arroz Chaufa
One of Peru’s most iconic rice dishes receives a premium update with roasted cod marinated in pisco and ají panca, accompanied by Nikkei-style fried rice featuring octopus, prawns, pork and quinoa.
Mariscada
Seafood lovers can look forward to marinated scallops, octopus, prawns and fish served over silky potato purée with brown butter and topped with ikura.
Beef Anticuchos
Stone Axe Wagyu is marinated in panca chilli and miso before being served with huancaína sauce, baby corn and sesame seeds, giving Peru’s famous street food a refined Nikkei twist.
Chocolate Mousse
The meal concludes with a rich chocolate mousse featuring Peruvian chocolate, Japanese grapes, kiwicha seeds and Peruvian gooseberries.
Available for Three Months
The High Table x Daniel and Tamara Chavez collaboration will be available from 14 August to 21 November 2026, giving diners several months to experience the exclusive menu.
Selected dishes are available throughout lunch and dinner, while others are offered exclusively during dinner service.
