What if the ingredients you usually throw away could become the highlight of your next meal?
That’s the question behind Eat Your Scraps, an immersive dining experience presented by nottofu and Bricolage at GREEN-HOUSE Festival 2026. Blending sustainability with culinary creativity, the one-hour guided experience invites diners to rethink food waste through a six-course tasting menu crafted from upcycled kitchen scraps.
More Than a Tasting Menu
Rather than simply serving a meal, Eat Your Scraps combines storytelling with hands-on learning.
Throughout the guided walk-and-dine experience, guests will hear directly from the creators behind each course, discovering how everyday leftovers can be transformed into flavourful dishes. Expect insights into techniques such as turning prawn shells into rich XO sauce, repurposing stale bread into dessert and incorporating spent coffee grounds into savoury dishes.
A Six-Course Zero-Waste Menu
The tasting menu showcases six small courses that highlight creative ingredient reuse.
Starters
- Fava & Veg Trim Treacle Balsamic, featuring vegetable peels transformed into vegetable treacle.
- Kohlrabi & Spent Coffee Shoyu, where used coffee grounds become part of a coffee-infused shoyu pairing.
Mains
- Cavatellini & Prawn Shell XO, showcasing an XO sauce made from prawn shells.
- Grain Salad & Pickled Citrus Pith, giving citrus peels a second life as a tangy accompaniment.
Desserts
- Malted Milk & Banana Skin Jam, using the entire banana, including its peel.
- Guava & Caramelised Bread Sauce, featuring stale bread reinvented as a rich dessert sauce.
As ingredients are seasonal, dishes may vary during the event.
Take Home Sustainable Cooking Ideas
Guests won’t just leave with a memorable meal.
Each participant will also receive:
- A set of recipe cards featuring the dishes served
- Practical kitchen tips for reducing food waste at home
- A complimentary 180ml packet of Nobo Soy or Almond Soy Milk
The organisers hope participants will leave inspired to rethink how they cook and make better use of ingredients that would otherwise end up in the bin.
Event Details
The one-hour experience accommodates just 25 guests per session, with two sessions held daily from 28-30 August 2026:
- 5pm to 6pm
- 8pm to 9pm
Guests are advised to arrive 15 minutes before their selected session for registration.
Early bird tickets are priced at S$48 for the first 50 bookings using the promotional code GH2026EARLYBIRD, after which tickets are available at the regular price of S$54.
