Two acclaimed MICHELIN-starred restaurants from Hong Kong and Singapore are joining forces for an exclusive culinary collaboration this August as ESTRO welcomes Thevar for a limited two-night dining experience.
Taking place on 6 and 7 August 2026 at ESTRO in Hong Kong, the collaboration brings together Chef Antimo Maria Merone and Chef Mano Thevar for the first-ever partnership between their restaurants. Guests can expect an eight-course tasting menu that explores the meeting point between refined Italian cuisine and contemporary Indian flavours.
Two Chefs United by Heritage and Innovation
Although their culinary traditions originate from different parts of the world, both chefs share a philosophy of honouring their heritage while embracing modern techniques.
Chef Mano Thevar’s cuisine reflects his upbringing in Penang and Indian roots, interpreted through the precision of contemporary fine dining. His restaurant, Thevar, has earned two MICHELIN Stars and international recognition for its bold, spice-led cuisine.
At ESTRO, Chef Antimo Maria Merone draws inspiration from his Neapolitan upbringing, presenting elegant Italian dishes shaped by both tradition and experiences gained throughout his international culinary career.
Their collaboration highlights the similarities between the two cuisines, with both chefs exploring bold flavours, balanced acidity, texture and thoughtful craftsmanship.

An Eight-Course Journey Where Italy Meets India
Rather than presenting individual signature dishes, the chefs have created a fully collaborative tasting menu, with every course developed jointly by both kitchens.
The evening begins with a selection of creative snacks including:
- Carrot Pani Puri
- Amaebi Balchão Black Ink Tart
- Dosai
- Bombay Chilli Cheese Potato Toast
These opening bites set the tone for a menu that seamlessly blends Italian techniques with contemporary Indian flavours.

Signature Dishes Showcase Both Culinary Traditions
Throughout the evening, diners will experience dishes that weave together ingredients and cooking styles from both restaurants.
Highlights include:
- King Crab Rasam Panna Cotta, combining ESTRO’s signature panna cotta with rasam and caviar
- Spanish Octopus served with fermented green chilli sabayon
- Pomfret accompanied by a fragrant Southern Indian-inspired Mappas sauce
The pasta courses continue the dialogue between the two cuisines with handmade Tagliolini served alongside sweet potato gravy infused with Indian spices, while Bottoni is paired with tandoori butter sauce, matsutake mushrooms and black truffle.
A Collaborative Finale
The savoury courses conclude with Lumina Lamb Rack, accompanied by black garlic, parsnip purée, sorrel chutney and acar togayal, before an original Biryani with Italian Spices created exclusively for the collaboration.
Dessert continues the cross-cultural theme with a collaborative Lorenzini melon creation, followed by petit fours including Cannoli with Payasam Cream, bringing the evening to a memorable close.
A Collaboration Continues in Singapore
Following the Hong Kong dinners, the collaboration will travel to Singapore, where ESTRO will join Thevar for a second series of dinners on 6 and 7 September 2026, giving diners in both cities the opportunity to experience this unique culinary partnership.
