This May, SUSHISAMBA Singapore is presenting a curated series of one-night-only dining and cocktail experiences that bring together chefs, sommeliers and bartenders from across the region. Held across three evenings, the programme highlights cross-cultural flavours, Champagne pairings and a Southeast Asian bar collaboration — all set against the restaurant’s signature skyline backdrop at Capital Tower.

SUSHISAMBA x CANCHITA Chef Collaboration Dinner (19 May 2026)
On 19 May 2026, SUSHISAMBA Singapore will host a collaborative dinner with guest chefs Daniel Chavez and Tamara Chavez from Canchita Peruvian Cuisine, alongside SUSHISAMBA’s Senior Executive Chef Paul Hallett.
The one-night-only experience explores the diversity of Peruvian flavours through a curated four-course menu featuring six dishes and a welcome cocktail. The evening begins with a Coconut & Pandan Pisco Sour, followed by starters such as Tiradito Nikkei with Japanese-Peruvian dressing and Causa de Calamarcitos paired with crispy baby calamari.
A SAMBA Moriawase Nigiri selection showcases premium seafood including salmon, tuna and yellowtail before the menu moves into richer flavours with Chilean Sea Bass glazed in white miso and Anticucho de Wagyu prepared over robata with aji panca chilli and huancaína sauce.
Dessert rounds off the evening with Tres Leche Cake, accompanied by passionfruit, candied orange and pistachio ice cream.

Boizel Éclat Champagne Pairing Dinner (21 May 2026)
Champagne lovers can look forward to a dedicated pairing experience on 21 May 2026, featuring four expressions from the historic Boizel Champagne house.
Hosted together with Boizel’s Export Manager Matthieu Desmaison and SUSHISAMBA’s Cluster Head Sommelier Viknes Koonnusagaran, the dinner pairs Champagne with a seafood-focused progression designed to highlight texture and balance across each course.
The menu begins with Yellowtail Tiradito with truffle soy and caviar, paired with Boizel Brut Réserve NV, followed by Chef Moriawase Nigiri Sushi alongside Boizel Ultime Zéro NV.
A richer course of Australian Wagyu Striploin is matched with Boizel Grand Vintage 2014, before the evening concludes with Caramelised Pineapple, coconut crème brûlée and ice cream for a tropical finish.

SAMBA Shift Guest Bar Takeover Featuring Phnom Penh’s Elephant Bar and Kravat (28 May 2026)
Closing out the month on 28 May 2026, the SAMBA Shift guest bartender series returns with a cross-continental cocktail showcase spotlighting Phnom Penh’s evolving mixology scene.
Guest bartenders Jason Daniel from Elephant Bar (Raffles Hotel Le Royal) and Nel Pel, founder of Kravat Speakeasy Bar, will each present four cocktails reflecting their distinct styles — from refined classics to more narrative-driven experimental creations.
The takeover offers a rare opportunity to experience two contrasting cocktail philosophies within a single evening.
