HighHouse Singapore continues its chef collaboration series, The High Table, with a new culinary showcase featuring Chef Sun Kim of two-Michelin-starred Meta. Running from 10 April to 27 June 2026, the collaboration introduces six exclusive dishes that reflect the chef’s Korean heritage alongside his internationally influenced cooking style.

Set against HighHouse’s rooftop setting, the limited-time menu blends contemporary Korean flavours with the venue’s pan-Asian direction, offering diners a chance to experience a more approachable expression of Chef Sun Kim’s cuisine across both lunch and dinner service.

A Collaboration That Highlights Culinary Perspectives

The High Table series brings guest chefs into the HighHouse kitchen to reinterpret the restaurant’s pan-Asian identity through their own culinary lens. Each edition introduces a distinct perspective shaped by personal heritage, technical training and creative storytelling.

For this third instalment, Chef Sun Kim presents dishes that balance bold flavours with refined techniques while adapting his signature style to suit the relaxed yet elevated atmosphere of HighHouse.

Chef Sun Kim’s Culinary Journey and Signature Style

Born in Busan and raised in Seoul, Chef Sun Kim developed his early appreciation for flavour in his family’s restaurant before formal training at Le Cordon Bleu Sydney. He later refined his craft under Chef Tetsuya Wakuda before moving to Singapore to join Waku Ghin.

In 2015, he opened Meta, a tasting-menu restaurant that combines Korean influences with Japanese precision and Western techniques. Over the years, Meta has earned widespread recognition, culminating in two Michelin stars in 2024.

Singapore has played a defining role in shaping Chef Sun’s culinary identity, and his cooking today reflects a balance of restraint, clarity and thoughtful composition. For this collaboration, he introduces dishes inspired by familiar Korean flavours while adapting them into a format suited to HighHouse’s social dining environment.

Highlights from The High Table x Chef Sun Kim Menu

The six-dish collaboration menu showcases a range of textures and flavours, from lighter starters to comforting mains with a modern twist.

The Kingfish Sashimi features Australian Hirama kingfish paired with pomelo, myoga and shiso, complemented by gochujang dressing with hints of wasabi and chive oil for a bright and refreshing opening course.

Beef Carpaccio is prepared tataki-style using hay-smoked Argentinian beef tenderloin layered over soy-milk dashi jelly and finished with mustard dressing and citrus notes.

Vegetarian diners can opt for the Eggplant with Salsa, where crispy fried eggplant is served alongside burnt capsicum salsa, citrus soy with yuzu kosho and confit garlic, finished with puffed quinoa for texture.

A standout seafood option is the Lobster Gyeran Jjim, a delicate steamed egg custard enriched with haemultang sauce made from lobster shells and gochujang, topped with French blue lobster poached in tarragon butter and finished over charcoal.

Steak Bibimbap (S$58++)

For heartier mains, the Steak Bibimbap reimagines the Korean classic with chargrilled flank steak and seasonal vegetables over steamed rice, finished with gochujang and garlic sauce.

The Beef Short Rib delivers a rich and smoky experience with charcoal-grilled Australian short rib served alongside mushroom ragu, caramelised onion purée and grilled shishito peppers.

Together, these dishes reflect Chef Sun Kim’s approach to combining familiarity with innovation while creating flavours that resonate with a wide audience.
