A Botanical Hideaway in Phuket
Sipping Tiger has officially opened at InterContinental Phuket Resort, introducing an intimate cocktail bar inspired by Thai wilderness, local botanicals and a thoughtful zero-waste philosophy. Designed as a refined den tucked within lush greenery, the space blends warm woods, woven textures and ambient lighting to create a cocooning atmosphere for slow, intentional evenings.
Guests can settle at the main bar framed by rattan details and pendant lights, retreat to The Den — a private 12-seater ideal for discreet celebrations — or explore the Botanical Room, where herbs such as Thai basil, lemon verbena, dill and various mints are grown and used directly in the cocktails.

A Cocktail Programme Rooted in Sustainability
Helmed by Head of Beverages Alif Abru and Bar Manager Kunawut (Kim) Wongruen, the bar’s philosophy centres on locally sourced ingredients and responsible sourcing. Developed in collaboration with Thai universities and local farms, the programme embraces sustainability as a long-term commitment rather than a passing trend.
The team’s zero-waste approach focuses on transforming ingredients rather than discarding them, allowing each botanical to express its full flavour and character.

Cocktails That Evolve Through the Night
The menu features ten cocktails designed to move from lighter, refreshing serves to richer, spirit-forward pours.
Calamansi Riposato offers a bright aperitivo-style start with cinnamon, peach sherbet and citrus notes that evolve as the ice melts. Rum Cartel delivers a herbaceous take on the mojito with chocolate mint, cucumber and passion fruit honey. Shiro presents a crisp highball with chrysanthemum and yuzu sake, while Smoke & Summer offers a tropical Mezcal Paloma variation layered with fermented pineapple agave.
For deeper profiles, Den It Again highlights aged local agricole rum developed with Chalong Bay Rum, layered with guava and five spice. Leaf & Brine reinterprets the Dirty Martini with oyster gin and kaffir lime-infused vermouth, while When Night Falls offers a complex nightcap of bourbon, amaro and subtle salinity. Dessert Island rounds off with pandan-aged rum, tea infusion and upcycled coffee liqueur.
Non-drinkers are also catered for with zero-proof options such as Watermelon Splash and Skinny Mango, a playful nod to mango sticky rice in liquid form.
