Best known for his creative blend of classic French techniques and Mediterranean soul, Chef Olivier’s arrival marks a new chapter for this Gatsby-style beachfront mansion, where storytelling meets show-stopping gastronomy.

French Riviera Meets Island Glamour

With more than 30 years of experience in luxury kitchens across Europe and Asia—including stints alongside legends like Joel Robuchon and Pierre Gagnaire—Chef Olivier’s food is both refined and refreshingly accessible. At Pink Pearl, he brings together the flavours of the French Riviera with local Vietnamese ingredients, creating dishes that are vibrant, seasonal, and rich in heritage.

On the Menu

Expect signatures like:

• Locally-sourced charcoal-grilled bonito, paired with endive salad, comté cheese and vierge sauce
• Bohémienne – a traditional Provençal-style dish made with eggplant, tomato, and parmesan
• Octopus with hummus, pomegranate & spices

“This concept was inspired by my early days on the French Riviera,” says Chef Olivier. “I want to bring out the brilliance of each season’s ingredients while honouring the soul of Mediterranean cuisine.”
