Amara Singapore is turning up the heat this April with the return of its Local Legends dining series, and this time, they’ve teamed up with none other than the grandfather of heritage cuisine himself—Chef Damian D’Silva of Rempapa.

From 2 to 17 April 2025, Café Oriental will host a special collaboration that pays tribute to Singapore’s culinary roots with a selection of dishes that tell stories of tradition, culture, and family. Known for his Peranakan-Eurasian lineage and passion for preserving heritage recipes, Chef Damian is bringing to the table a curated menu inspired by his life’s work in championing Singapore Heritage Cuisine.

A Menu That Speaks of Time and Tradition

Expect bold, nostalgic flavours in every dish. Diners can look forward to a lineup that includes:

• Ayam Buah Keluak
• Eurasian Lamb Dhalcha
• Chi Pow Kai (paper-wrapped chicken)
• Eurasian Grilled Snapper
• Brinjal Pacheree
• Kedondong Salad (a Rempapa favourite)
• A colourful kueh platter to end on a sweet note

All meals are served with Chef Damian’s homemade acar, a tart and spicy pickled vegetable relish that adds punch to every bite.

The dishes are available à la carte or as part of two sharing-style set menus—

• 3-course set at S$60++
• 5-course set at S$70++
  (both with a minimum of 2 diners)
