The heart of InterContinental Singapore, The Lobby Lounge, receives a brand new culinary facelift that reflects the property’s contemporary yet heritage-forward identity, with a diverse tapestry of dining experiences.
The revitalisation is rooted in four key pillars, each drawn from the hotel’s food and beverage offerings to reveal enticing new menus. Designed with the best of luxury hospitality in mind, The Lobby Lounge becomes more than just a space, but the core of the property’s DNA, where unforgettable memories are woven into every touchpoint.
Introducing Specially-crafted Cocktails
Much to the delight of seasoned tipplers, The Lobby Lounge unveils an all-new cocktail menu meticulously crafted in collaboration with consulting award-winning mixologist Jesse Vida. This exciting foray into cocktails introduces a dynamic energy that runs through the property and positions The Lobby Lounge as the hub of conversation for the discerning. The menu, comprising day and night cocktails that complement how the space evolves from dawn to dusk, champions the use of local spices and herbs such as cloves, cumin and star anise.
Each chapter on the menu is inspired by the hotel’s neighbourhood, beginning with Sultan Gate Garden. This section gains inspiration from the iconic Gelam Trees and spice garden of the former Malay palace in Kampong Glam. Guests can start with Royal Rosales (S$22) — a concoction of Kyrö Gin, Nardini Bitter, strawberry grapefruit, lemon, absinthe, pink pepper and sea salt.

Meanwhile, drinks in the Arab Street chapter pay homage to Singapore’s first-generation businesses; aptly named Flower Shop Sour (S$22), this spirit-forward drink is made of Chalong Bay Spiced Rum, kaffir leaf-infused Ceylon Arak, clove orange cordial, coconut cream, lemon, chamomile honey and orange bitters.
As the page turns, we venture over to Haji Lane, the famed street known for its electrifying buzz. The street’s pulsating spirit inspired Haji Paji (S$22), an agave-based drink made of Tequila Ocho Plata, Herrencia Mezcal, cumin, grapefruit, lime, absinthe and soda, shaken in tribute to good times spent in the vibrant alley. Albert Food Centre, one of Singapore’s best hawker centres, is also spotlighted on the menu, with cocktails such as Tjendol Milk Punch (S$22), reminiscent of the chendol, a coconut-based iced dessert found in the hawker. The clear pandan-infused drink uses a meticulous milk-washing technique, lending a delicate silky texture bolstered by the comforting notes of coconut, gula melaka and lemon.
The journey ends at 80 Middle Road, home of InterContinental Singapore, with the Legacy Eighty (S$22) — a sophisticated blend of Bobby’s Gin, blue pea-infused Blanc Vermouth, Champagne, tamarind and orange bitters, as well as its smokier counterpart, Flaming Tightrope (S$22), featuring Nikka FTB, toasted rice, basil, chilli and soda.
Serving these cocktails will be assistant manager and mixologist, Rhodora Amurao, who ensures each drink is shaken and stirred to perfection. She shares: “The new cocktail menu at The Lobby Lounge not only reflects the rich heritage of the Bugis and Bras Basah neighbourhoods, but is also an ode to the art of mixology. Aside from unique spice infusions, it is designed to engage the five senses of taste, smell, touch, sight, and sound — the last being the stories we get to tell through each drink.”
Light bites and all-day dining menu
“We wanted to create a menu that is unique to InterContinental Singapore and reflects the cultural diversity of the area, by taking cues from the different landmarks and infusing an array of spices inspired by them. Guests can discover the vibrant neighbourhood by tasting the very bits that make it unique,” shares Vida.
An all-day dining destination
Situated at the intersection of InterContinental Singapore, guests can expect to have their local and global palates engaged with The Lobby Lounge’s renewed all-day dining menu. Expertly created by esteemed Chef De Cuisine, Charles Nguyen, it presents an exciting medley of international mains and elevated local signatures — each served with a satisfying dose of ‘wok hey’ goodness.
When asked about his culinary philosophy, Nguyen shares: “I believe food is a bridge between different cultures and a powerful way to foster connections between people from various backgrounds. This new menu is an amalgamation of flavours that present authentic Singaporean cuisine and international fare, and I wish for guests to fully experience them at their best here at The Lobby Lounge.” The menu also includes popular offerings from its portfolio of dining outlets: Cantonese restaurant Man Fu Yuan and Italian concept LUCE.
The Singapore Style Chilli Crab Sliders, Satay Panggang and Vietnamese Netted Spring Roll are a great accompaniment to the cocktails. The Seafood Fried Hokkien Mee and Our Singapore Laksa are filled with incredible wok hey and tantalising char. Otherwise, embark on a global exploration of cuisines with dishes such as the ‘Pulled’ Lamb Panini, a 24-hour braised lamb shoulder sandwiched in toasty Italian bread, and Hungarian-style Angus Beef Short Rib Goulash, served with mustard mashed potatoes and topped with sour cream and chilli flakes.
