Using BamNut Milk in this recipe, it is more nutritious than using regular milk or cream! Vegetarian friendly.

| 1 potato, peeled and diced | |
| 1 tomato, diced | |
| 1 stalk curry leaf | |
| 1 stalk lemongrass | |
| 5 pcs lady finger (okra) | |
| 2-3 pcs small red onion | |
| Few leaves of cabbage | |
| 3 tsp curry powder | |
| 120g curry paste | |
| 2 pcs tofu puffs | |
| 2 tbsp cooking oil | |
| 250ml BamNUT M?LK | |
| Salt to taste | 
| 1. | Pre-fry potato in oil until slightly cooked and golden. | 
| 2. | In a pan/pot, heat oil and stir fry small red onion, lemongrass, curry leaf, curry paste and curry powder until fragrant. | 
| 3. | Once fragrant, add remaining vegetables except for tomato and tofu puff and continue to fry. | 
| 4. | Add 350g water and cover with lid and let simmer. | 
| 5. | Add tomato and continue simmering. | 
| 6. | Lastly, add BamNut M?ILK and simmer for about 15 minutes. Add salt to taste. |
