Ingredients

1 potato, peeled and diced
1 tomato, diced
1 stalk curry leaf
1 stalk lemongrass
5 pcs lady finger (okra)
2-3 pcs small red onion
Few leaves of cabbage
3 tsp curry powder
120g curry paste
2 pcs tofu puffs
2 tbsp cooking oil
250ml BamNUT M?LK
Salt to taste

Instructions

1.Pre-fry potato in oil until slightly cooked and golden.
2.In a pan/pot, heat oil and stir fry small red onion, lemongrass, curry leaf, curry paste and curry powder until fragrant.
3.Once fragrant, add remaining vegetables except for tomato and tofu puff and continue to fry.
4.Add 350g water and cover with lid and let simmer.
5.Add tomato and continue simmering.
6.Lastly, add BamNut M?ILK and simmer for about 15 minutes. Add salt to taste.
