Those who prefer seafood can head to the cold selection for Irish Oysters served with poached apple and smoked cream, or Kingfish Ceviche accompanied by guacamole and burnt buttermilk. Beef Tartare with egg yolk gel and croutons is another option.

The Blue Spring Martini (S$25++) mixes Belvedere vodka, lychee, sake and blue spirulina. Meanwhile, Echoes of Earth (S$25++) pairs miso-infused Hennessy VSOP with amaretto, cacao and chocolate bitters, served with a beetroot tiramisu snack.
