Fans of Japanese tonkatsu have two new pork cuts to try at Shin Katsu in Tanjong Pagar. The restaurant is introducing Sangenton pork from Japan’s Hirata Farm in two set meals, with a 1-for-1 offer every Monday throughout November and December 2026.

What makes Hirata Farm’s Sangenton pork different?

Hirata Farm traces its beginnings to 1953 in Yamagata Prefecture, when it started with just two pigs. It is known for developing its branded Sangenton pork, produced from a three-breed cross intended to combine desirable qualities in flavour, texture and meat production.

According to the restaurant, the pigs are raised for around 200 to 240 days, compared with the 150 to 180 days it cites for conventional pork farming. They are kept in open-style barns and fed a plant-based, non-GMO diet. The resulting pork is described as finely textured with generous marbling and fat that melts at a relatively low temperature. These are the producer’s claims rather than findings from our own tasting.

Rosu or hire: Which tonkatsu set should you order?

The Hirata Rosu Katsu Set (S$36.80) uses pork loin, which has a balance of lean meat and fat. It is the option for diners who enjoy a richer, juicier cut.

The Hirata Hire Katsu Set (S$37.80) features pork tenderloin. This leaner cut is aimed at those who prefer a softer, more delicate texture without as much fat.

Both sets are prepared using chef Matsubayashi Masato’s panko-breading method, designed to give the pork a crisp coating while keeping the meat juicy. A speciality salt accompanies each set so diners can taste the pork without relying solely on sauce.

1-for-1 Hirata Rosu Katsu on Mondays

From November to December 2026, Shin Katsu will offer a 1-for-1 promotion on the Hirata Rosu Katsu Set every Monday. The regular price is S$36.80 per set. The announcement does not specify additional promotional conditions, so it is worth checking directly with the restaurant before visiting.

The new sets join Shin Katsu’s existing premium pork tasting options, including the Gensen Set (S$38) and Gokusen Set (S$48), which feature different pork varieties and cuts.
