MGallery Collection is extending its collaboration with Michelin-starred Thai chef Pichaya “Pam” Soontornyanakij, with her bar bites and cocktail pairings set to remain available at six participating hotels and resorts across Asia until mid-2027.

The collaboration first launched during World Cocktail Months 2026, when MGallery paired a series of Chef Pam’s dishes with cocktails created in partnership with Citadelle Gin. The extended run brings the menu back to properties in Phuket, Seoul, Sapporo, Hong Kong, Nanjing and the Maldives.

From World Cocktail Months to a Longer Residency

Chef Pam is the founder of Potong in Bangkok, which earned a Michelin star in its first year. Her cooking is known for using contrast, balance and storytelling, and she was named “Asia’s Best Female Chef” in 2024 and “World’s Best Female Chef” in 2025.

For the MGallery collaboration, that approach has been adapted to the hotel bar setting, with a selection of small plates designed to be served alongside cocktails. Rather than treating the food as a separate bar menu, each bite has been matched with a specific drink.

Chef Pam’s Signature Bar Bites and Cocktail Pairings

The core menu features five pairings:

  • Caviar-Crowned Tartare — beef seasoned with shio kombu, served in a cone with chilli crème, paired with the Prohibition Martini, a dirty Martini-inspired cocktail with a parmesan element.
  • Tender Temptation Wings — boneless wings with a lime and tamarind chilli dip, paired with The Botanist’s Waltz, a floral cocktail inspired by an early 20th-century classic.
  • Sun-Kissed Crab — crab with yellow curry and mustard mayonnaise, served with Midnight Fizz Society, which gives the Cuba Libre a Champagne finish.
  • Truffle Shuffle Polenta — charred polenta with truffle butter and parmesan, paired with Cult of Verde, a savoury take on the Last Word.
  • Squid’s Midnight Dip — fried squid with kombu salt and squid ink dip, paired with Archive of Tomorrow, which draws on Mediterranean flavours.

Regional Dishes Add Local Influences

Alongside the main menu, Chef Pam has also created dishes that vary by market. Guests in Thailand and the Maldives can find Shrimp Garden Toast and Air & Fire Corn, while hotels in Mainland China and Hong Kong serve Fiery Mantou Bun and Soy-Dipped Purple Fries.

In Japan and South Korea, the regional additions are Tofu & Apple Eclipse and Sea Breeze Tartare.

The collaboration is scheduled to continue until mid-2027, extending a concept that began as part of MGallery’s World Cocktail Months 2026 programme.
