Lobster Bar & Grill at Island Shangri-La Hong Kong will welcome Bangkok’s Parisian neo-bistro iODE for a two-night-only collaboration dinner taking place on 22 and 23 April 2026. The exclusive six-course menu marks iODE’s first international collaboration and its debut in Hong Kong, bringing together two distinctive culinary approaches in a limited-time dining experience.

The collaboration pairs Lobster Bar’s refined brasserie-style cooking with iODE’s seafood-driven interpretation of contemporary French cuisine, creating a menu shaped by both European technique and regional influences.

A First Taste of iODE in Hong Kong

Founded in Bangkok’s Sathorn district, iODE has gained attention for its playful reinterpretation of French bistro cooking, combining classical methods with bold flavour combinations and premium imported seafood. Led by Parisian chefs Franck Le Bayon and Victor Baudu, the restaurant’s approach emphasises expressive compositions designed for sharing in a lively open-kitchen setting.

For this collaboration, iODE presents a selection of dishes that reflect its signature style while engaging in dialogue with Lobster Bar & Grill’s ingredient-focused modern European cooking.

Highlights from the Six-Course Collaboration Menu

The evening begins with collaborative bites including Padron Pepper Skewers served with onion salsa and green oil, alongside a reinterpretation of prawn toast paired with tom yum mayonnaise and coriander.

iODE then introduces its seafood-focused direction through dishes such as Dry-Aged Seabream Sashimi with yuzu kosho and pink peppercorn, followed by a richly layered bone marrow course topped with uni and yellow wine sabayon.

A standout langoustine course served with entrecôte sauce, bisque and fennel salad further showcases the kitchen’s approach to combining depth with precision.

Lobster Bar & Grill contributes dishes that reflect its signature brasserie identity, including lobster served with beetroot, horseradish and dill, as well as a locally inspired grilled turbot prepared “Typhoon Shelter”-style with celtuce and broccolini.

The menu continues with iODE’s pigeon pithivier with foie gras, a classic French centrepiece reinterpreted with contemporary finesse, before concluding with Lobster Bar’s rhubarb and strawberry dessert paired with hibiscus granita, meringue and elderflower cream.

Together, the menu highlights the shared focus of both kitchens on ingredient-driven cooking while presenting contrasting yet complementary culinary perspectives.

A Rare Two-Night Collaboration at Island Shangri-La Hong Kong

This limited collaboration reflects Lobster Bar & Grill’s ongoing efforts to introduce visiting chefs and regional dining concepts to Hong Kong audiences through short-run culinary events.
