This March and April, Racines at Sofitel Singapore City Centre is putting the spotlight on spring’s finest ingredientwith Asparagus Artistry, a limited-time seasonal menu running from 3 March to 30 April 2025. Featuring premium white and green asparagus from Europe, this special dining experience showcases the versatility of asparagus through an elegant three- or four-course set dinner.

A Refined Celebration of Asparagus

Crafted to highlight the delicate flavours and unique textures of asparagus, the menu blends classic French techniques with modern innovation.

Starters

• Asparagus Tartlet – A refreshing cold starter featuring green asparagus, sea asparagus (salicornia), celtuce, egg gel, kombu duxelle, and sea grapes, delivering a perfect balance of earthy, briny, and umami notes.
• White Asparagus Velouté – A creamy, velvety soup made from Holland’s premium white asparagus, complemented by Hokkaido scallops and asparagus ragout for added depth and sweetness.

Main Course

• Black Cod with Egg Floss Crust – Delicately charred green asparagus and a radish gâteau accompany a succulent black cod fillet topped with a crisp egg floss crust, all brought together with a tobiko sauce that enhances the dish’s rich, umami flavours.

Dessert

• Asparagus au Chocolat – A unique white chocolate dessert shaped like asparagus, paired with truffle-infused dark chocolate “soil” and olive oil caviar, offering a harmonious blend of sweet, savoury, and earthy elements.
