Duddell’s Hong Kong, the Michelin-starred Cantonese destination by JIA Group, has entered an exciting new chapter following an extensive transformation. Officially reopened on 9 August 2025, the restaurant now features a stunningly redesigned interior, elevated culinary offerings, and a vibrant new cocktail program — while staying true to its mission of celebrating heritage and innovation.

The Upper Room at Duddell’s

A Dual-Level Culinary Experience

The refreshed space presents a two-floor concept designed to cater to diverse dining moods:

3/F Main Dining Room — Offers refined Cantonese tasting menus, artisanal à la carte dishes, and heritage specialties, crafted by Master Chef Chan Yau Leung.

4/F The Upper Room — A stylish, casual dining and cocktail lounge featuring dim sum, small plates, and weekend brunch, perfect for relaxed afternoons and late-night indulgence.

Cantonese Classics Reinvented

Helmed by Chef Chan Yau Leung, who brings over 40 years of culinary mastery from Hong Kong and Japan, the new menu highlights Cantonese gastronomy elevated through technique and premium ingredients. Signature dishes include:

Sautéed Prawn with Chicken Essence (HK$498/person) — Thai three-head prawns with rich, slow-steamed chicken broth.

Crispy Stuffed Crab Shell (HK$328/person) — Golden shells filled with fresh crab, shallots, milk, and butter.

Braised Australian 3-Head Abalone with Goose Palm (HK$698/person) — A luxurious slow-braised delicacy.

Duddell’s Crispy Fried Chicken (from HK$368/half) — Marinated for 10 hours and “hang-fried” over 300 times for unmatched crispiness.

Steamed Flower Crab with Chencun Noodles and Plum (MP) — A banquet-worthy creation balancing sweetness and acidity.

For those seeking opulence, heritage delicacies like Buddha Jumps Over the Wall (from HK$1,988) and Bird’s Nest & Partridge Porridge with Yam (HK$3,188/pot) showcase rare Cantonese craftsmanship at its finest.

A Cocktail Program That Tells a Story

Leading the refreshed beverage experience, Mario Calderone introduces an innovative cocktail program inspired by Duddell’s artistic spirit. Standout creations include:

Lake (HK$138) — Floral jasmine vodka and elderflower.

Infinite (HK$138) — A milk-punch-style mezcal cocktail with apple and sakura.

Earth (HK$138) — Aperol meets baijiu, osmanthus honey, and pineapple.

For non-alcoholic indulgence, the Zero-Proof Essence Collection features refreshing blends like Verve (oolong, green apple, and ginger) and Still Gold (mango, yuzu soda, and passionfruit).

Art Meets Design

The restaurant has been reimagined by renowned designer André Fu into a sophisticated art collector’s maison. Drawing inspiration from Lingnan architecture and 1920s Diao Lou watchtowers, the interiors feature pistachio green, mineral blue, and buttery yellow tones, layered symmetry, and chinoiserie accents — a perfect marriage of heritage and contemporary elegance.

A Space to Savour and Celebrate

With private dining rooms for intimate gatherings, the revamped Duddell’s is perfect for special occasions, business lunches, or indulgent weekend brunches. The Upper Room also offers live DJ sets, bringing vibrant energy to Hong Kong’s dining scene.
