For the first time in Singapore, Man Fu Yuan at InterContinental Singapore will present an authentic showcase of the legendary Manchu-Han Imperial Feast on 8 and 9 November 2025. Known as one of China’s most elaborate and prestigious culinary traditions, this rare two-night dining experience features more than 20 meticulously crafted dishes, helmed by Executive Chinese Chef Aaron Tan and his mentor, Master Chef Qi Jinzhu, a direct culinary descendant of the Qing Dynasty’s imperial chefs.
A Culinary Legacy Revived
Dating back to the 17th century Qing Dynasty, the Manchu-Han Banquet was once reserved for emperors and grand state occasions, comprising over 100 dishes across several days. Master Chef Qi, trained under Tang Keming, the last imperial chef of the Qing court, has spent over five decades preserving these time-honoured recipes. Chef Aaron Tan, the first Singaporean formally appointed as Master Chef Qi’s disciple, brings this legacy to life with a modern yet respectful touch.
“Marrying the robust flavours of Manchu fare with the refined subtleties of Han cuisine has been both a challenge and a joy,” shares Chef Aaron Tan. “Every dish demands precision, patience, and premium ingredients to honour this imperial culinary art.”
Highlights of the Feast
Priced at S$588++ per person, this exclusive dinner begins with a Cantonese tea ceremony, followed by an intricate multi-course experience. Dishes to look forward to include:
Auspicious Cold Platter – A curated selection of Braised Duck Gizzard, Beef Shank, Wasabi Pork Tripe, and more.
The Phoenix Returns to the Nest
The Phoenix Returns to the Nest – Double-boiled bird’s nest with chicken mousse, Chinese ham, and white fungus, resulting in a luxuriously silky broth.
Kun Lun Abalone – Premium abalone braised with dried grouper skin for an umami-packed delicacy.
Orchid Bear Paw (Imitation) – A painstakingly recreated royal delicacy using pig skin, minced pork, and beef tendon to emulate the original’s texture.
Roasted Whole Lamb – Marinated in Mongolian spices and perilla leaf, then slow-roasted to tender perfection.
Pearl White Jade Soup – A delicate finale featuring baby spinach, tofu, and rice.
The feast also features Lee Kum Kee’s premium sauces to complement the dishes’ rich, layered flavours.

To elevate the evening, diners will be treated to a live orchestra, traditional Chinese calligraphy demonstrations, and elegant court-style dance performances, creating an immersive journey into the grandeur of the Qing Dynasty.
