SanSara at Grand Copthorne Waterfront Hotel Singapore will host The North Table, a five-day collaboration between Master Chef Pannalal Nath and visiting North Indian chef Mujeeb ur Rehman, from 9 to 13 September 2026.
The two chefs have created four-course and six-course menus that draw from regional North Indian cooking, family recipes and the royal culinary traditions of Awadh. Vegetarian and non-vegetarian options will be available, together with a separate à la carte menu.
North Indian Recipes Shaped by Family Heritage
Chef Mujeeb ur Rehman’s approach to Awadhi cuisine is influenced by several generations of his family.
His great-grandfather, Abdul Raheem Quraishi, worked in the Royal Kitchen of Awadh during the British era, while his grandfather, Mohammad Ahmed Quraishi, later established a restaurant in Old Lucknow.
For The North Table, Chef Rehman brings this family knowledge together with Chef Pannalal’s experience in regional Indian cooking. The resulting menu uses techniques including slow cooking, charcoal grilling and handcrafted spice blends.
Four-Course and Six-Course Menus
Among the dishes on the non-vegetarian menu is Shahi Galawati Kebab, a soft, finely textured kebab associated with Awadhi cuisine.
Other highlights include Bharwan Calamari, filled with prawn and crab mousse, and Kashmiri Morel Pulao with Saffron Butter Lobster Kurchan, finished with roasted nuts and fresh herbs.
Vegetarian diners can choose dishes such as Chowk Ke Tikki, Rajma Ki Galouti and Kashmiri Morel Pulao with Saffron Paneer Rogan Josh.
The meal concludes with Sheer Khurma, a saffron-infused dessert traditionally prepared with vermicelli, milk and dried fruit.
Four-course menus are priced at S$68++, or S$98++ with beverage pairing. Six-course menus cost S$98++, or S$128++ with beverage pairing.

À La Carte Dishes
Diners who do not want a set menu can order from a limited à la carte selection featuring dishes from both chefs.
Options include Bhune Tamater Jao Ka Shorba, a tomato-based soup, and Dum Ke Machli, which may be served seared or steamed.
Another featured dish is Murgh Tikka Mirza Hasnu, comprising a slow-braised chicken drumstick served in a North Indian consommé with spicy, tangy and smoky flavours.
