Hong Kong’s Mama Tiger has unveiled a refreshed dining concept, expanding beyond its well-known noodle dishes to offer a broader celebration of authentic Thai street food.

Located in Sheung Wan, the restaurant has introduced 13 new dishes under the direction of Chef Thanit Changchai, creating a menu inspired by the vibrant street food culture of Bangkok. The expanded selection encourages communal dining, with skewers, curries, salads and sharing plates complementing the restaurant’s signature noodle bowls.

A Bigger Taste of Thailand

Previously known for its boat noodles and khao soi, Mama Tiger now offers a more complete Thai street food experience that reflects how meals are traditionally enjoyed in Thailand.

Chef Thanit, who brings more than two decades of culinary experience from Bangkok, has designed the new menu around bold flavours, smoky grilled dishes and classic regional recipes that are made for sharing.

New Skewers Inspired by Bangkok’s Street Markets

One of the most significant additions is a new selection of grilled skewers inspired by Thailand’s bustling roadside food stalls.

Highlights include:

  • Minced Pork Balls with Pickled Egg Yolk
  • Chicken Thigh Skewers with Pickled Egg Yolk
  • Beef Chuck Roll with Lime Chilli Sauce
  • Tiger Prawns with Green Chilli Sauce

Each order includes two skewers, showcasing the balance of char, spice and acidity that defines Thai grilling.

Fresh Salads, Curries and Wok-Fried Specialities

The expanded menu also introduces a variety of starters and mains celebrating different regions of Thai cuisine.

New dishes include:

  • Smoked Duck Namtok Salad
  • Spicy Grilled Eggplant with Soft-Boiled Duck Egg
  • Phuket Seafood Salad with Tiger Prawns and Scallops
  • Stir-Fried Flat Rice Noodles with Thai Mushrooms and Sriracha

Curry lovers can enjoy dishes such as Green Curry Duck Leg with fresh coconut and soft-boiled egg, as well as Pan-Fried Scallops in Yellow Curry with pineapple and lychee.

The menu also features a comforting bowl of Tom Yum Kung, prepared with tiger prawns, lemongrass and galangal for a rich, aromatic broth.

Signature Noodle Dishes Remain

While the menu has expanded considerably, Mama Tiger’s best-known noodle dishes continue to anchor the dining experience.

Returning favourites include the restaurant’s Wagyu Beef Boat Noodles, layered with brisket, beef balls and crispy pork rinds, alongside its signature Khao Soi, combining creamy curry broth with coconut, pickled vegetables, shallots and lime.

Together with the new sharing plates, the restaurant now offers a more complete Thai street dining experience.

Led by Chef Thanit Changchai

Originally from Bangkok, Chef Thanit Changchai previously managed one of the city’s renowned boat noodle restaurant groups before relocating to Hong Kong.

Drawing on more than 20 years of experience across restaurant kitchens and hospitality operations, he continues to focus on traditional Thai recipes while ensuring consistency across every dish served at Mama Tiger.

The expanded menu reflects his vision of bringing the flavours and energy of Thailand’s street food culture to Hong Kong diners.
