Thai cuisine is back in the spotlight at Grand Copthorne Waterfront Hotel Singapore with the return of the Thailand Flavourscape Buffet. Running from 13 July to 23 August 2026 at Food Capital, this year’s edition expands beyond last year’s Phuket-inspired menu to showcase dishes from different regions across Thailand.
The buffet is presented with the support of the Royal Thai Embassy Singapore and brings together three chefs for an exclusive six-hands collaboration. Leading the line-up is MasterChef UK finalist Chef Nawamin “Boss” Pinpathomrat, owner-chef of REALM Bangkok, REALM Songkhla and REALM Thumnoonvithim. Joining him are Chef Witoon Kamonphun, Head Chef of M Social Hotel Phuket, and Executive Chef David Toh of Grand Copthorne Waterfront Hotel Singapore.
Together, the trio has created a menu that explores Thailand’s regional cuisines, from the northern provinces and central plains to the country’s southern coastline.
A buffet inspired by Thailand’s regional flavours
This year’s buffet aims to offer a broader view of Thai cuisine through a mix of familiar favourites and lesser-known regional dishes. Diners can expect aromatic curries, spicy soups, street food and traditional desserts.
Among the highlights are:
- Grand Tom Yum Goong, a prawn soup flavoured with lemongrass, galangal and kaffir lime
- Andaman Seafood Curry with Betel Leaves
- Wagyu Massaman Curry
- Signature Yellow Curry Flower Crab
- Tom Yum Fried Rice with Prawns
- Steamed Seabass with Lime and Chilli
- Southern Phuket-Style Braised Pork Belly
- Pad Thai Goong
- Fried River Prawns with Garlic and Pepper
Guests can also visit live stations serving Thai Boat Noodles, Moo Ping pork skewers and freshly prepared Thai salads and condiments.
Save room for dessert
The dessert spread includes several well-known Thai sweets, including Mango Sticky Rice, Thai Tea Mousse Cake, Pumpkin Custard, Thai Crispy Pancakes and Thai Milk Tea Ice Cream.
Opening night celebrations
Those dining on the opening evening of 13 July can expect more than just food.
The launch event will feature a Thai-style Whole Golden Pig served with traditional accompaniments such as Nam Jim Jaew and Thai seafood sauce. There will also be cultural performances by Anurak Thai Arts & Culture, including classical Thai dance and performances using the traditional Thai string instrument known as the Khim. Pop-up stalls and a lucky draw will round out the evening’s festivities.

Thailand Flavourscape Afternoon Tea
For those who prefer something lighter, The Lobby Lounge will also be serving a Thailand Flavourscape Afternoon Tea throughout the promotion period. The set includes savoury items such as Lemongrass Chicken with Sweet Chilli Dip, Thai Fish Cakes and Tom Yum Goong Seafood Tartlets, alongside desserts including Thai Mango Macarons, Taro Coconut Mousse and Pandan Coconut Swiss Roll.
The afternoon tea is priced at S$68++ for two and includes an AI-powered wellness assessment and a bespoke herbal tea recommendation created in collaboration with Luli. Guests can also add wellness mocktails or low-alcohol cocktails to the experience.

A Thai-inspired tiffin lunch set
The Lobby Lounge is also introducing a Thailand Flavourscape Tiffin Lunch Set inspired by everyday Thai comfort food.
Served in a traditional multi-tiered tiffin carrier, the set includes Thai Basil Minced Pork with Fried Egg, Thai Fish Cake, Wok-Fried Kai Lan, Tom Yum Soup with Prawn, steamed jasmine rice and a dessert of the day. The set is available daily from noon to 3pm and is priced at S$28++.
