Chooby Pizza is bringing the flavours of Cambodia to Singapore with a new limited-edition collaboration created in partnership with Smiling Gecko Cambodia. Available from 1 to 31 July 2026, the special pizza celebrates Khmer cuisine through a creative interpretation of one of Cambodia’s most iconic dishes, Fish Amok.

A Cambodian Classic Reimagined as Pizza

Created by Chooby Pizza founder and pizzaiolo Mason Lim, the new Fish Amok Pizza takes inspiration from Cambodia’s national dish, a fragrant fish curry that dates back to the ancient Khmer empire.

Traditionally, Fish Amok is known for its aromatic combination of lemongrass, fish sauce and galangal, creating a balance of sweet, savoury and mildly spicy flavours. Chooby Pizza has translated these flavours into a pizza that remains true to its Napoletana roots while offering diners something unexpected.

The pizza features a rich coconut sauce infused with kreung, a traditional Cambodian spice paste, and is topped with chunks of hake fish. It is then finished with fresh herbs, chilli, wild leaves and delicate marigold flowers, adding both colour and complexity to the dish.

Bringing Khmer Cuisine into the Spotlight

As Cambodia continues to attract more Singaporean travellers, its cuisine remains relatively underrepresented in Singapore’s dining scene. The collaboration aims to introduce diners to Cambodian flavours in a familiar and approachable format through pizza.

According to Mason Lim, the project presented an opportunity to showcase the depth and character of Khmer cuisine, particularly its distinctive use of herbs and spices, while working with an organisation that shares a passion for Cambodian culture and hospitality.

A Partnership with a Purpose

The collaboration forms part of Smiling Gecko Cambodia’s broader efforts to promote Cambodian culture and create sustainable opportunities for rural communities through education, hospitality, agriculture and vocational training. The non-profit organisation is best known for initiatives such as the award-winning Farmhouse Resort & Spa and Restaurant UN in Cambodia.

Co-founder Sokleap Ngon believes food is one of the most effective ways to introduce people to a country’s culture, stories and hospitality, making the partnership a meaningful way to raise awareness of Cambodia beyond tourism.

The Fish Amok Pizza is available exclusively at Chooby Pizza from 1 to 31 July 2026, offering diners a chance to experience a slice of Cambodia through one of Singapore’s favourite pizza spots.
