A Reunion of Two Cantonese Culinary Powerhouses

On 13 November 2025, culinary stars align once more as Chef ArChan Chan of Ho Lee Fook and Chef Jayson Tang of one MICHELIN-starred Man Ho Chinese Restaurant come together for an exclusive, one-night-only event. Taking place at Ho Lee Fook in SoHo, Hong Kong, this dinner will reimagine the revered “Four Treasures” of Cantonese gastronomy: abalone, sea cucumber, fish maw and shark fin (represented in a vegetarian form).

This marks their second collaboration, following a successful debut that blended heritage and creativity in a way that delighted Hong Kong diners.

A Contemporary Lens on a Storied Tradition

The menu is more than a showcase of premium ingredients. It’s a tribute to the city’s rich maritime heritage and the dried seafood trade that once defined Hong Kong’s culinary identity. Abalone, symbolic of prosperity; sea cucumber, a nod to resilience; fish maw, cherished for nourishment; and shark fin, traditionally seen as a symbol of refinement — these ingredients speak to generations of tradition.

But in this dinner, they’re not just preserved — they’re reimagined. Both chefs are applying their signature contemporary edge, respecting the roots while pushing boundaries.

The Eight-Course Line-Up

Fish Maw with Green Sichuan Pepper Sauce

“Xiao Long Bao” with Braised Abalone in Supreme Broth

Hairy Crab Meat & Roe with Vegetarian Shark Fin

Sea Cucumber with Chu Hou Sauce and turnip cake

Bitter Melon, Fish Maw and Salted Black Bean

Abalone in Abalone Liver Sauce

Sea Cucumber, Pork Patty, Preserved Chinese Sausage, and Glutinous Rice

Dessert: Vegetarian Shark Fin with Guava, Pomelo, and Coconut

Each course layers texture, meaning, and culinary precision — with modern interpretations that avoid gimmick and instead offer thoughtful progression.

For Chef ArChan, recently awarded the One Knife Award by The Best Chef Awards 2025, this dinner is a homecoming of sorts: “These ingredients are timeless. They speak to our roots and reflect how we continue to evolve.” Chef Jayson echoes the sentiment, highlighting how this dinner is about “bringing fresh energy to Hong Kong’s dining scene.”
