This autumn, the one MICHELIN-starred Duddell’s in Central Hong Kong unveils its annual Hairy Crab menu, honouring the return of the prized Jiangsu delicacy. Available until 19 December 2025, the seasonal celebration showcases a refined tasting menu and special à la carte creations by Executive Chef Chan Yau Leung.

The Hairy Crab Tasting Menu: A Decadent Eight-Course Experience

Duddell’s limited-time tasting menu (HK$1,688++ per guest) begins with a Xiaolongbao bursting with rich hairy crab roe, followed by a Steamed Whole Jiangsu Hairy Crab (225g), meticulously prepared to highlight the crustacean’s natural sweetness. For those seeking a more indulgent bite, an upgrade to a larger 300g crab is available at an additional HK$300 (limited daily availability).

The journey continues with a choice between Steamed Garoupa with Egg and Hairy Crab Roe or Sautéed Prawn with Hairy Crab Roe, both dishes balancing delicate seafood with the crab’s buttery depth. The savoury experience is rounded out with Braised Noodles in Chicken Soup topped with Hairy Crab Roe and a warm dessert of Japanese Sweet Potato Soup with Taro Balls and Ginger Syrup.

Guests may opt for a six-glass wine and sake pairing (HK$888++), featuring highlights such as Domaine Pattes Loup Chablis 2021 and Mukai Shuzo Ine Mankai Junmai Genshu—each chosen to complement the layered complexity of the dishes.

Seasonal À La Carte Highlights

Duddell’s also presents a series of hairy crab-inspired à la carte offerings for diners who prefer a more flexible experience. Standouts include Crispy Chicken Wings stuffed with Imperial Bird’s Nest and Hairy Crab Roe (HK$688 for 2 pcs), Braised Bean Curd with Scallop and Hairy Crab Roe (HK$498), and a hearty Braised Wuchang Rice with Fish Maw, Conpoy, Hairy Crab Roe, and Chicken Broth (HK$988 for 2 persons).

Of course, the signature Steamed Whole Jiangsu Hairy Crab (6-tael HK$538 / 8-tael HK$888) remains a centrepiece on the seasonal menu.

Following a recent renovation by André Fu Studio, Duddell’s has reopened with an enhanced two-floor layout, featuring the newly introduced Upper Room.
