The St. Regis Singapore has introduced a fresh culinary destination to its dining portfolio: Sophia, a restaurant dedicated to modern Italian cuisine. Nestled at the city’s most prestigious address, Sophia captures the essence of Italian hospitality — combining classic recipes, convivial rituals, and regional variety with elegant, contemporary execution.

Authenticity with a Modern Touch

Headed by Chef Angelo Sergio from Puglia, Sophia celebrates Italy’s culinary diversity with dishes drawn from 11 distinct regions. The focus? Honest ingredients, high-quality produce, and time-honoured techniques, all served with the warmth of Italian hospitality. Designed as a space for gathering, Sophia’s menu is meant to be shared — a true reflection of Italian dining culture.

Highlights from the Menu

Starters include house-made focaccia with cherry tomatoes, bresaola paired with goat cheese and honey, and creamy stracciatella with smoked red tuna. Diners can also expect seafood-forward antipasti like Polpo Grigliato with fava beans and Tropea onions, and Carpaccio di Gamberi, featuring buttery Mazara red prawns with raspberry gel, celery, and sea salt.

Pasta lovers can look forward to Tagliatelle Atavi e Porcini, made with exclusive hickory-smoked Atavi tagliatelle and a veal jus reduction. The Pappardelle al Ragù, with hand-shredded Wagyu beef, promises slow-cooked indulgence in every bite.

Mains include the Bistecca alla Fiorentina — a one-kilogram Angus T-bone grilled and seasoned with pepperberry sea salt — and Baccalà in Umido, a comforting yet refined cod stew with silky white onion sauce, potatoes, and artichokes.

Desserts and Tableside Treats

Classic dolci are not to be missed, with Tiramisu, Baba Napoletano soaked in limoncello, and Cannoncini alla Crema— all served with flair, including some prepared tableside. The restaurant also offers a rotating dessert trolley to end meals on a sweet, theatrical note.

Sophia Set Lunch

From Monday to Saturday, guests can enjoy two- or three-course set lunches at $42++ and $58++, respectively. On Sundays, brunch at Sophia becomes a festive affair, complete with live music, mozzarella and pasta stations, a gelato cart, and endless pours of R de Ruinart Champagne and wines — priced at $198++ per person.

Signature Cocktails and a Deep Wine List

Sophia’s beverage programme features creative signatures like the Amalfi Breeze, Bella Rossa, and Negroni Bianco, all crafted with Malfy Gin and Amalfi botanicals. These sit alongside Italian classics like Aperol Spritz and Negroni.

The wine list spans 70 artisanal labels across Italy’s famed regions — from Franciacorta to Sicily’s Etna. Nine organic wines are also featured, alongside classic digestifs such as Grappa, Limoncello, and Sambuca.
