Curated by Chef and Founder Manav Tuli, this HK$1,188++ per person dining experience (with optional wine or Saicho sparkling tea pairing) resurrects centuries-old recipes from India’s royal courts and ancient dynasties, blending historical authenticity with contemporary presentation.

Each course is a window into India’s culinary heritage, inspired by Persian manuscripts, Ayurvedic traditions, and oral histories. Highlights include:

Rasam (Fish Cheek Soup) – A tangy, spiced broth once crafted by Ayurvedic physicians to heal royalty in ancient Madurai.

Vataka (Crab & Lentil Cake) – Inspired by lentil dumplings from the Mauryan Empire, once enjoyed by warriors and commoners alike.

Shishranga Murg (Six-Colour Chicken) – A 17th-century Mughal masterpiece layered with meats, nuts, and saffron.

Aash-E Bawardi – A rich beef curry with lentil dumplings, paying homage to Shah Jahan’s royal kitchens.

Kola Urandai (Lamb Croquette) – A modern take on Sangam-era warrior protein balls.

Qaliya Shirazi (Persian Lamb Stew) – A saffron-scented delicacy symbolising prosperity in the Mughal courts.

Aashsham Khichdi (Barley & Lamb Kedgeree) – A sustaining dish from Mauryan soldiers, refined for royal banquets.

Khaja (Pistachio Cream Crisps) – A layered sweet from the Mauryan era, ending the meal on a nostalgic note.

Chef Tuli and his team spent years researching these dishes, drawing inspiration from food historians such as Salma Yusuf Husain, to ensure each plate serves as a bridge between the past and present.
