To mark 15 years at the top of Singapore’s skyline, CÉ LA VI Singapore has unveiled a dramatic transformation of its flagship rooftop restaurant, opening a new chapter in immersive dining and modern Asian flair. Perched atop Marina Bay Sands, the revamped space debuted on 26 June 2025 with a fresh look, vibrant menu, and elevated hospitality that promises to wow both locals and international guests.
A Fresh Take on a Celebrated Space
Designed by Prospect Design International, the new interiors are a seamless blend of style and substance. Guests now flow through distinct zones—from the dramatic main dining room with a statement bar, to an expanded private dining area adorned with botanical wallpaper and brass accents, to open-air seating along the Ocean View balustrade. These redesigned areas reflect the lush vibrancy of Southeast Asia with rich textures, burgundy-stained wood, and intricate bamboo and carved wood elements, all working together to create an inviting and refined atmosphere.
A Menu Rooted in the Region, Refined for the Rooftop
Black Truffle “Sushi Rice” Okayu
The refreshed culinary direction blends the boldness of traditional Southeast Asian flavours with refined global technique. Guests can indulge in a five-course tasting menu or go à la carte, exploring inventive dishes that highlight regional influence. Think A4 Miyazaki Beef Tataki with turmeric leaf oil, Daikon Apple Salad with basil miso, or Miso Chilean Seabass served with a punchy Szechuan green chili sauce—a nod to CÉ LA VI’s London outpost.
Vegetarian standouts like the umami-rich Black Truffle “Sushi Rice” Okayu and sweet finishes such as Dulce Miso Toffee and Chocolate Mousse with coconut Earl Grey sorbet round out the dessert menu. Diners can also sample house-made ice cream in regionally inspired flavours like pulut hitam, sea salt gula melaka, and kaya.
Cocktails with a View and a Story
The centrepiece bar is more than an eye-catcher—it’s the stage for an adventurous cocktail programme. Highlights include “The Silent Gold,” a tropical margarita twist with shiso leaf, and “Ed’s Favourite Negroni,” a reinterpreted White Negroni with a clean, herbal finish. For something deeper and richer, “Midnight in Jalisco” combines Don Julio 1942 with Luxardo Maraschino cherry for a decadent sip under the stars.
