Shangri-La Singapore’s beloved Italian dining destination, Waterfall Ristorante Italiano, is set to unveil a vibrant new chapter in its culinary journey. Launching 16 May 2025, the restaurant’s updated menu introduces over 20 new à la carte dishes inspired by the traditions and flavours of Southern Italy — particularly the Puglia region, where Chef de Cuisine Simone Loisi hails from.

This refresh brings a delightful mix of rustic charm and refined technique to diners, all while preserving the warmth and spirit of Italian hospitality. Expect hearty sharing plates, handcrafted pastas, robust grilled meats, and elegant desserts designed to spark conversations and satisfy cravings.

Shared Plates for Communal Indulgence

In true Italian spirit, Waterfall introduces Pizza in Pala (SGD 88++), a long, rectangular pizza featuring three flavour combinations of your choice — perfect for groups who love variety. Meat lovers will gravitate towards the Fiorentina Alla Grigila (SGD 168++), a 1kg Angus T-bone steak grilled to perfection and carved tableside for dramatic effect.

New Standouts on the Menu

Among the new antipasti is the Bruschetta Stracciatella e Crudo (SGD 25++), topped with creamy cheese and Parma ham, while the Porchetta alla Birra (SGD 26++) delights with crispy pork belly slow-roasted in beer.

Salad lovers should not miss the Caprina Salad (SGD 26++), where warm breaded goat cheese meets Parma ham, toasted walnuts, and a drizzle of honey-thyme dressing. For something lighter, the Vellutata Del Giorno (SGD 22++) offers a velvety soup prepared fresh daily.

Fresh Pizzas & Handcrafted Pasta

Chef Simone honours his Puglian roots with ten varieties of freshly made pizzas, including new options like the Della Nonna — topped with eggplant Parmigiana, Mortadella, and Burrata.

Pastas are made in-house and feature Italian classics with a twist:

  • Spaghetti alla Chitarra con Aragosta (SGD 68++): served with whole Boston lobster and cherry tomatoes.

  • Sedanini alla Nerano (SGD 29++): short pasta tossed with zucchini and Canestrato cheese.

  • Ravioli ai Funghi (SGD 34++): mushroom ravioli in a Parmigiano fondue and truffle sauce.

  • Orecchiette al Ragù di Braciole (SGD 32++): Southern-style pork ragù with Pecorino cheese.

Carnivores will appreciate the 250g Bistecca alla Griglia (SGD 68++), served with homemade fries, garden salad, and beef jus. Seafood lovers can opt for the Polpo alla Griglia (SGD 52++), a grilled octopus leg on roasted pumpkin purée, with leek sauce and citrus dressing.
