This June, The Ritz-Carlton, Millenia Singapore invites food lovers on a two-day gastronomic adventure with Leela, the one-MICHELIN-starred modern Indian restaurant from Hong Kong. This special collaboration reimagines the historic Silk Road through a series of innovative culinary and cocktail experiences.

Silk Road-Inspired Dining at Summer Pavilion – 6 June 2025

One-night-only, the acclaimed Summer Pavilion plays host to an eight-course menu crafted by Chef Manav Tuli of Leela and Chef Cheung Siu Kong of Summer Pavilion. The result is a masterful fusion of Cantonese refinement and Indian spice, showcasing the chefs’ shared passion for heritage and innovation.

Menu Highlights Include:

  • Fish Skin Chaat: Mumbai street food meets crispy Hong Kong fish skin

  • Lamb Keema Stuffed Chicken Wings: Glazed with tangy kokum

  • Tiger Prawn Chingri Malai: Served in a coconut, double-boiled Cantonese style

  • Wagyu Beef Cheek with Bamboo Shoots: Spiced with Kashmiri chili and cardamom

  • Crab Dosa with Preserved Roe: A hybrid of wok-fried crab and South Indian crepes
