Racines at Sofitel Singapore City Centre has introduced a refreshed Straits heritage menu titled Home: Flavours from the Heart, a new chapter that explores regional flavours shaped by memory, migration and home-style cooking traditions across Southeast Asia.

The new selection expands Racines’ long-standing Asian repertoire with more than 20 heritage-inspired dishes that reinterpret familiar favourites through contemporary techniques while preserving their comforting character.

A Menu Inspired by Regional Roots and Personal Food Memories

Known for its dual-cuisine concept combining Asian and French influences, Racines continues to build on its reputation with a menu shaped by chefs’ personal culinary journeys across the region.

Returning signatures such as beef hor fun, Hokkien mee and chicken rice remain part of the restaurant’s identity, while the newly introduced Straits heritage selections deepen the Asian storytelling behind the dining experience.

The new dishes reflect the cultural intersections that define Straits cuisine, presenting flavours influenced by Peranakan kitchens, regional Chinese cooking traditions and Southeast Asian spice profiles in refined yet approachable formats.

Familiar Heritage Dishes Reinterpreted with Contemporary Techniques

Nonya Assam Curry Snapper

Among the highlights is Racines Nasi Goreng (S$28), a comforting interpretation inspired by the chefs’ own upbringing. The dish features aromatic wok-fried rice paired with 24-hour marinated ayam panggang, ikan bilis, peanut rempah, nyonya achar and a fried egg, bringing together multiple textures and flavour layers in a single plate.

Another standout is the Nyonya Assam Curry Snapper (S$38), where naturally sweet snapper is simmered in a tangy tamarind-based curry with okra and eggplant before being finished with crisp rice-paper “scales” for added texture and contrast.

Also featured is the Hainanese Style Pork Chop (S$48), alongside smaller plates such as Crispy Tofu Omelette ‘Tahu Telur’ (S$18) and Wok Fried Yam ‘Abacus’ Dumplings (S$28) that reinterpret familiar heritage flavours through Racines’ modern presentation style.

A Regional Dessert Reimagined with Southeast Asian Ingredients

Ending the meal on a nostalgic note is Cempedak Crème Brûlée 2.0 (S$18), a reinterpretation of the classic French dessert with Southeast Asian influences.

The slow-baked custard is infused with cempedak and paired with pickled mango, warm cardamom sauce and coconut ice cream, creating a dessert that balances richness with aromatic spice and tropical sweetness.
