Verandah Rooftop Rotisserie at Momentus Hotel Alexandra has launched a refreshed rooftop dining concept centred around its new in-house meat-ageing programme, bringing greater depth of flavour to its signature rotisserie and grill offerings.

Located on Level 7 of the hotel and overlooking the Alexandra skyline, the rooftop venue now presents a dining experience that evolves throughout the day — from rotating Asia-inspired lunch menus to modern European semi-buffet dinners anchored by premium aged meats.

A Rooftop Concept Built Around In-House Aged Meats

At the core of the refreshed concept is Verandah’s dedicated ageing process, where selected cuts are matured over time to enhance tenderness and intensify flavour. This technique allows the kitchen team greater control over preparation while bringing out richer textures across the restaurant’s key meat offerings.

Highlights from the rotating selection include:

  • Cape Grim striploin
  • Argentinian Angus ribeye
  • Wagyu Cut of the Week

Depending on the cut, meats are aged between 14 and 21 days before being grilled over open heat for a caramelised exterior and juicy interior.

Available on weekdays, the Asia-Inspired Lunch Tour introduces rotating regional menus that change each month, offering diners a different culinary focus with every visit.

The experience combines a semi-buffet spread with a plated main course and includes selections from the restaurant’s house-aged meats alongside antipasti and lighter dishes.

The first theme in the series, Local Flavours, features dishes such as:

  • Butcher’s weekly dry-aged beef
  • Dry-aged spring chicken
  • Sambal red snapper

Live stations also serve familiar favourites like satay and laksa, while desserts reinterpret local ingredients through creations such as longan and wolfberry jelly and yam purée crème brûlée.

Future editions of the lunch series will spotlight Japanese, Heritage Peranakan and Thai Street Eats themes.

As evening sets in, Verandah shifts into a relaxed rooftop dinner destination with a Modern European semi-buffet dinner format built around its in-house ageing programme.

Prime beef selections form the centrepiece of the dinner experience, supported by additional mains such as:

  • French corn-fed yellow chicken aged for 72 hours
  • Miso cod with balanced umami richness
  • Iberian pork tenderloin, prized for its marbling and depth of flavour

Beyond the mains, the semi-buffet spread includes a rotating selection of:

  • wood-fired pizzas
