Wagyu lovers in Singapore can look forward to the return of The Art of Wagyu, a limited-time dinner buffet at Lime Restaurant in PARKROYAL COLLECTION Pickering, Singapore from 8 May to 28 June 2026. Following the strong response to last year’s edition, this year’s showcase expands on the concept with new dishes alongside returning favourites, highlighting both Japanese A5 and Australian wagyu prepared across a variety of international styles.
Curated by Executive Chef Alvin Leong, the buffet explores the signature richness, marbling and umami depth that wagyu is known for, presenting it through comforting classics, Asian interpretations and creative fusion plates.
Fans of the previous edition will recognise several popular dishes making a comeback. These include:
- Charcoal-grilled Japanese A5 Wagyu cube skewers
- Korean-style wagyu tartare
- Smoked wagyu striploin
- Wagyu burgers
- Thai Massaman wagyu beef cheek curry
Each dish highlights a different way wagyu can be interpreted across global cuisines while retaining its signature tenderness and flavour.
New Wagyu Creations Introduced This Year
This year’s edition introduces a fresh selection of dishes that take the experience further with richer flavours and inventive pairings. Highlights include:
- Bologna wagyu bone marrow risotto
- Braised wagyu beef bourguignon
- Wagyu galbi skewers
- Wagyu makhani pizza
At the noodle station, diners can also enjoy wagyu pho prepared by a robotic arm, adding a fun interactive element to the dining experience.
On weekends, the buffet expands further with premium additions such as:
- Slow-roasted herb-crusted wagyu rib eye
- Aburi wagyu tataki nigiri
- Sichuan wagyu and bacon nasi lemak pizza
- Steamed wagyu char siew buns
- Wagyu ramen
The menu reflects a thoughtful mix of European comfort dishes and Asian favourites built around wagyu as the central ingredient.
Seafood Highlights Complement the Wagyu Selection
While wagyu takes centre stage, the buffet also includes a strong seafood selection.
Guests can expect:
- Boston lobster
- Snow crab
- Singapore chilli crab meat
- Soft shell crab piccata
- Steamed mussels in white wine broth
On weekends, diners can also look out for a richer surf-and-turf highlight — lobster and wagyu bone marrow parmesan wheel risotto, combining roasted marrow with lobster for an indulgent finish.
